The famous Shiga restaurant "Shinohara" has opened in Ginza. The gorgeous and luxurious hassun, sprinkled with seasonal flavors, will get your heart racing.
"Shinohara" is a famous restaurant in Shiga that has continued to impress gourmets all over the country. The owner, Takemasa Shinohara, decided to throw away all his previous fame and move to Tokyo. I
...n October 2016, he made a fresh start as "Ginza Shinohara". Follow the small lantern at the entrance of the building to the basement and you will find a clean and dignified space. The interior is simple yet stylish, with an L-shaped counter made of plain wood. Shinohara's attention to detail is also evident in the tableware, which includes Old Baccarat. The menu only has an "omakase course", and on one day the course began with a "shippo mori" (a plate of seven treasures), featuring seven ingredients such as abalone and sea urchin as seven treasures. The menu, which changes every month, is one of the joys of visiting the restaurant, from the "appetizer", which serves as a greeting from the chef, to the "hassun" (a plate of seasonal delicacies, mainly from Shiga ingredients). Shinohara has honed his skills at famous restaurants, including "Yamagencha", and his skills and sensibilities are beautifully reflected in the restaurant. This dish, described as "as beautiful as a painting," continues to stimulate the senses of diners even in the new world of Ginza.
