Owner, Hiroaki Yamagishi. In order to learn the skills of a craftsman from an early age, he intentionally chose to train at individual shops such as "Ginza Kurozushi" to gain experience. After being involved in the establishment of "GENTLE_Sushi" and gaining experience until now, in July 2022, he opened the long-awaited "Noboru" with solid skills, despite his youth, achieving this in the shortest possible time.

The characteristic of "Edomae sushi" is that each ingredient is prepared with a technique that suits its individual personality. It requires a great deal of effort, but in return, it allows us to maximize the potential of the ingredients. One that I definitely want you to try is tuna. We source the highest quality tuna available during its peak season, regardless of the region. The slightly pink, fatty tuna is aged just right to enhance its umami flavor, melting in your mouth and leaving a strong umami aftertaste.
