ChefTakahiro Yamagishi - The spirit of hospitality reflected in cooking
Born in Kyoto Prefecture in 1975. His father ran a fish shop, so Yamagishi had a lot of contact with food from an early age. Aiming to become a sushi chef, he began training at Nanae Sushi. He then deepened his knowledge of ingredients at Kyoto Central Market, where he encountered kaiseki cuisine. He honed his skills at renowned restaurants such as Tankuma Kitaten and Kyoto Ichinoden, before going independent with Tominokoji Yamagishi in October 2015.

Tominokoji Yamagishi is an impressive old-fashioned restaurant built in a renovated tenement house that is over 130 years old. The stone-paved approach from the entrance resembles a "roji" (open garden), and with each step you step away from the hustle and bustle outside. The interior of the restaurant is modeled after a teahouse, and the flowers arranged by the owner add color to the simple scenery. Only ten people can sit at the slender, single-plank counter. In this comfortable atmosphere of tension, you can enjoy conversation with the owner, who is rich in wide-ranging knowledge.

A variation suddenly appears in the traditional flow of tea kaiseki. That is the specialty dish of "Tominokoji Yamagishi" - "Sea Urchin One-Line Sushi" (Sea Urchin Nori Roll). Unusually for kaiseki cuisine, this luxurious nori roll is handed to you over the counter and is packed with the delicate techniques of the owner, who has also trained as a sushi chef. This kaiseki cuisine is unique to this restaurant, with the owner's playfulness added. You will want to let yourself go with the comfortable flow of the meal, with its varying tempos.
