Originally from Okayama Prefecture, he is a skilled chef who has spent 17 years at Ginza's long-established tempura restaurant, "Tenichi." In 2013, he opened his own restaurant, "Niitome." His earnest attitude towards tempura and his exquisite deep-frying techniques have captivated many gourmets. In addition to the well-paced tempura, guests can also enjoy conversation with the friendly owner.

The seasonal flavors are fried quickly with beautiful movements. Tempura, served on elegant Shigaraki ware, is a visual treat and looks like a work of art. The texture of dishes such as scallops, which are served almost rare, changes rapidly as they are heated from the moment they are served, so no matter what, it is best to put them in your mouth as soon as they are freshly fried. Tempura fried in oil that has been blended based on the experience and knowledge accumulated up to this day, each and every one of them is the best Tempura of the season, or even that day.
