We offer a course meal featuring Japanese wagyu steaks, such as Kobe beef and Aka beef, based on French cuisine. Our steaks are carefully cooked from the center using a custom-made oven that reaches temperatures of 900°C, along with the infrared effects of binchotan charcoal. The surface is crispy and fragrant, while the inside remains juicy, retaining all the meat's juices. The straw-grilled steak, infused with a subtle aroma of straw, evokes a sense of nostalgia. We present this in a beautifully decorated classic modern French style.
Others "Executive Chef Nobuo Bunbu Captivates Hearts with Dishes Crafted from Surefire Techniques"
Born in 1967. He began his career as a chef at the Palace Hotel. After gaining experience at renowned establishments such as the two-star French restaurant "La Pyramide" and the two-star British restaurant "La Tante Claire," he worked for about 20 years at the Palace Hotel. He then served as the head chef at the members-only luxury hotel "Trusty Tokyo Bayside" and at a famous bridal house. In 2021, he became the head chef of the French restaurant "La Vie" at the Hotel Yamanoue. In August 2024, he will be appointed as the executive chef of the TCC restaurant division.
