Oden Takasago is an oden (Japanese stew) izakaya in the Katamachi area, Kanazawa City's downtown district, and it was founded in 1936.
The inside is said to feel somehow nostalgic, as if you had slipped back in time to old Japan. At the counter seats, you can spend your time watching the oden being prepared.

The oden at this restaurant is known for its Kanto-style dashi broth, something rare in Kanazawa, which has been topped up and reused since the restaurant first opened.

If the timing works out, be sure to try the winter-only kanimen (female snow crab shell dish) as well. You need to reserve it in advance to order.
This dish fills the shell with all parts of a female zuwai-gani (snow crab), including uchiko (immature roe), sotoko (outer roe), and meat, then soaks it in dashi (broth) for about 10 minutes. It is said to be packed with crab flavor and goes perfectly with the broth.

They warm the kani-men (stuffed crab shell) after you take your seat, so we picked our favorite oden items. We also had torigai (trough shell clam), Kanazawa hirozu (deep-fried tofu fritter), and kurumafu (wheat gluten cake), all specialties of Kanazawa oden. Everything was really good! The kani-men looked small, but it was packed with crab inside too! They also offer the nice service of pouring Kanzake into the shell after you finish eating! That was pure bliss.

Besides the classic daikon radish and atsuage (deep-fried tofu), the creative oden like kurumafu (wheat gluten bread) and rolled cabbage are also really delicious! Personally, I really liked the fried soft roe soaked in oden broth. I also got to enjoy seasonal fish dishes such as kue (longtooth grouper) sashimi and buri (yellowtail) wrapped in hoba (magnolia leaf).

Every sashimi on the funamori (boat-shaped platter) was delicious, and the oden was excellent too. My younger brother, who was trying Kanazawa oden for the first time, got hooked on the kuruma-fu (wheat gluten cakes). They also had a wide selection of Japanese sake, and the staff even recommended labels that were not on the menu, so everyone left very Manzoku.

It had a great balance of texture and flavor, and it is definitely something you should try at least once. A night in Kanazawa means oden (Japanese hot pot with assorted ingredients)! So I asked a local friend for a good oden place, and this is the restaurant they recommended. The daikon radish soaked with dashi, mochi-kinchaku (fried tofu pouch with rice cake), kurumafu (wheat gluten bread), and Chikuwasan’s “chikuwa” were all excellent, with a white color and fine texture. The ofu dengaku was also great, with the chewy bite of the fu. And then there’s the famous kani-men (stuffed crab shell)! You should definitely try it.

Kuroyuri is an oden restaurant founded in 1953, located inside Kanazawa Hyakubangai, the shopping complex within Kanazawa Station.
One of its draws is that you can casually enjoy Kanazawa oden along with local gifts from the mountains and sea and local sake. It is said to have a cozy atmosphere where you can relax without feeling formal.

Other than the oden, the Kaga local specialty "Hakusan kendo-fu (firm tofu)" left a strong impression. This firm tofu is made with water from the foothills of Mt. Hakusan and finished with a traditional method. It has a unique, dense, firm texture and a rich, concentrated soybean flavor. I had it as sashimi (sliced raw style). It goes great with beer and sake~.

Where I’m from, we don’t usually put ofu (wheat gluten) in oden, so I was amazed at how delicious the soft kuruma-fu (wheel-shaped wheat gluten) was after soaking up the broth!
