Looking at the menu, there were lots of local specialties, including nodoguro (blackthroat seaperch), shime saba kamaboko (cured mackerel fish cake), ago noyaki (grilled flying fish fish cake), and Shimane Wagyu roast beef! Feeling excited, I first ordered simmered nodoguro, Daisendori sake kasu-yaki (grilled with sake lees), and a tasting set of 3 kinds of Japanese sake. The nodoguro was so tender it almost fell apart, and the broth for the simmered dish had a delicate flavor, so I finished it in no time!

At this Matsue izakaya (Japanese pub), everything you order is good, from grilled liver to sasami (chicken tender) tempura with ume shiso. The Izumo soba yakisoba we ordered at the end was a flavor I had never tried before. Mixed with raw egg, it was excellent. I definitely recommend trying it as the finishing dish.

No matter which fish you try, it is really good. Being close to the sea is great. They also had several kinds of soy sauce for sashimi (sliced raw fish), but lately I like sweet soy sauce best. I had akamoku (a type of seaweed), deep-fried nagaimo (Japanese yam), kabuto-yaki (grilled fish head), and finished with shijimi ramen (ramen with freshwater clam broth), and the broth had a rich dashi flavor that really hit the spot.

Located right by the station, this place has great access and is easy to drop into on a whim. Every dish made with Miyazaki jidori (local free-range chicken from Miyazaki) was delicious, and the quality of the ingredients and the nice smoky aroma from the charcoal grilling were excellent. What stood out most were the “pig’s trotter Kara-age” and the “bonjiri (chicken tail).” The charcoal grilling was spot on, making them crisp on the outside and juicy on the inside, and they were really delicious.

"Hamayaki Sakaba Minato," a 5-minute walk from Matsue Station, is a popular izakaya where you can enjoy hamayaki (seaside-style grilled seafood) along with Sanin Japanese sake and more.
The interior has a warm and calm atmosphere, and all seats are in a relaxed Sunken kotatsu seating style. It also has a fully private room for 6 to 8 people.

One of the highlights of the hamayaki (seaside-style grilled seafood) here is that you use the tabletop grill and enjoy cooking it yourself. It seems they place a sheet on the table with instructions on how to grill it.
They also stock Japanese sake from Shimane, so it is the kind of place where you will want to take your time drinking while grilling seafood. They also offer courses where you can fully enjoy hamayaki.

You can also enjoy oysters grilled hamayaki-style (grilled over an open flame), but the "Kaki no Yakan-yaki (oysters steamed and roasted with sake in a kettle)" is also recommended.
The kettle is said to hold about 8 to 10 oysters. The menu also features seafood-focused items such as "uni-shabu (sea urchin hotpot)" and "shijimi ramen (clam ramen)."

The hamayaki (grilled shellfish and seafood) comes in five kinds: hotate (scallop), hamaguri (hard clam), kaki (oyster), ika (squid), and ebi (shrimp). Be careful with the oysters in the shell, because the shells can pop when they finish grilling. Even that kind of thrill feels like part of the seasoning, with how thick and rich the meat is. The overflowing umami of the hotate and the refined broth of the hamaguri are excellent. The springy texture of the nicely grilled ika and ebi makes the beer go down even faster.
