Wagyu is said to let you enjoy comparing the melt-in-your-mouth texture and rich flavor by production region, brand, and cut.
They also offer a shabu-shabu (Japanese hotpot) course centered on daily selected kuroge Wagyu (Japanese Black Wagyu), so you can fully enjoy meat with an excellent balance of quality fat and lean meat.

One of the best things about lunchtime here is being able to casually enjoy rare A5 Kuroge Wagyu (Japanese Black beef). According to reviews, the popular choice is the "yaki-shabu ju (grilled shabu-style beef box)."
The box is topped with glossy beef and tamagoyaki (Japanese omelet) over rice, and the tender meat pairs perfectly with the sweet and savory sauce.

I enjoyed luxurious shabu-shabu (Japanese hotpot) in a calm atmosphere. The broth had a wonderful aroma, and I was impressed from the very first bite. The main meat was surprisingly tender, and just a quick dip in the hot water brought out its rich flavor. Each vegetable was high quality, and the sweetness of the seasonal vegetables was especially memorable.

We were shown to a Semi-private room, which made it feel a little luxurious. At the entrance, rows of high quality meat immediately caught our eye, and my friend's excitement shot right up. We ordered the "yaki-shabu ju (grilled shabu-style rice box)" recommended by the friendly staff, and added Kyoto eggs as a topping. The rich flavor of the meat and the mellow taste of the egg came together for a very luxurious dish!

Ginza Nendori is a restaurant on the way from Kyobashi Station toward Higashi-Ginza Station where you can enjoy shabu-shabu made with the finest Domestic Wagyu.
The interior has high ceilings and an open feel with a Japanese modern atmosphere, and it also has Private rooms with views of the Ginza nightscape. They can accommodate groups of 2 to 8 people.
Photograph:sgr515
For the shabu-shabu, they use very fresh A4 and A5 rank Spencer roll and Strip loin cuts.
They are also particular about the hot water used to swish the meat, using natural carbonated water from Oita Prefecture. The mineral-rich sparkling water makes the meat more tender and brings out the natural flavor of the ingredients.
Photograph:n125
They offer 6 kinds of Special salts, condiments, and sauces, which is a nice touch because you can enjoy the shabu-shabu meat with the flavor you like best.
They also seem to have a creamy sesame sauce with no harsh notes and a ponzu sauce with mild acidity. Some reviews also say the salts are recommended because they bring out the meat’s natural sweetness.

I had the first bite with rock salt so I could really enjoy the flavor of the meat! It was tender and meltingly good, and it really impressed me!!It became a flavor I’ll never forget! They also prepared a variety of yakumi (condiments), so I could enjoy changing up the flavors as I ate◎

They use carefully selected natural sparkling water for the shabu-shabu, which brings out the full flavor of the meat and vegetables. There are clearly many reasons why the shabu-shabu here tastes so good. The side dishes, such as the surinagashi (pureed soup) and kani miso korayaki (crab miso grilled in the shell), are also high quality and very satisfying, leaving you Manzoku.

Ginza Serina is a Japanese restaurant with a long history dating back to its founding in 1961, and it is popular for its Wagyu and kani (crab) shabu-shabu.
It is located in a building along Ginza Chuo-dori, with easy access from Kyobashi Station, and guests can enjoy a relaxed meal in a warm space with a wood-based interior.
Photograph:ikuhime
They offer shabu-shabu made with top-grade Kobe beef, with a range of options including A la carte, lunch, and course meals.
The finely textured Kobe beef is known for its low melting point, and it is said to melt on the tongue, leaving only its rich flavor behind.
Photograph:kanaminn
For people who love crab, kani-shabu (crab shabu-shabu) is also recommended. The springy texture of the meat is hard to resist, and they apparently serve impressive looking crab as well.
The crab seems to be cut into easy to eat pieces from the start, so it is also perfect for people who find peeling the shell a hassle.
あーかか
I’ve visited several times already. When it comes to crab, it has to be Serina! It’s that good. The kegani (horsehair crab) is already picked from the shell, so you don’t have to go silent while eating it, which is great. For the main shabu-shabu (Japanese hot pot), the staff also serves it out for you. The service is attentive, and the place feels very comfortable.

Butasute KITTE Marunouchi Ten, located on the 5th floor of KITTE Marunouchi next to Tokyo Station and just steps from Kyobashi Station, is a shabu-shabu and sukiyaki restaurant run by a long-established butcher shop in Ise, Mie Prefecture.
From inside the restaurant, you can look out over the area around Tokyo Station, and it has a pleasant atmosphere that makes dining enjoyable.

The shabu-shabu made with Isegyu (Ise beef), a Kuroge Wagyu brand raised in Mie Prefecture, is well liked.
Isegyu is the cattle breed that became the root of Matsusaka beef, and only female cows that have never given birth and are at least 30 months old are used. The fat is not too rich, and it is said to have a good balance of lean meat flavor and gentle sweetness.
Photograph:3b578635909
Not just the shabu-shabu, but the restaurant’s signature korokke (croquette) is also a dish you should definitely try. It seems to be served as part of the shabu-shabu course as well.
It features a thin, crisp coating, while the potato inside is said to have a sticky texture and rich flavor. It appears to be enjoyed with a fruity sauce.

They offer a wide variety of courses, and the recommended option seems to be the All you can eat plan where you can enjoy as many as 6 to 7 kinds of meat. They also have a course for comparing Kobe beef and Matsusaka beef.
All of the meat is said to be delicious, and you can enjoy it with their secret sesame sauce that has been passed down for 50 years since the restaurant first opened. They also provide special ponzu sauce and rock salt.

If you want to enjoy shabu-shabu in a casual way, the lunch set is a great choice. The photo shows the "Mugitoro Set".
For the main meat, you can choose 2 types from several options such as beef loin and pork belly, and it also comes with a vegetable assortment. The quality of the meat is good, and it is said to be well liked for its satisfying volume.

I wanted to have some good shabu-shabu (Japanese hot pot), so I chose the Ginza Course, which comes with both beef and pork. Freshly ground sesame with a lightly sweet sesame sauce and chili oil? made the best dipping sauce. The quality of the meat was really good, the vegetables were fresh, and for Ginza, I think this price is a great deal.

The vegetable assortment had plenty of volume, from leafy greens to root vegetables, and the meat was sliced paper-thin with a glossy sheen. Kyoto Tsuyu Shabu CHIRIRI Ginza Kyobashi Ten is about a 1-minute walk from Exit 6 of Kyobashi Station, and serves shabu-shabu and sukiyaki made with Special ingredients.
The interior is said to be so quiet you would never guess it is near Tokyo Station, and it also has elegant tatami Private rooms with a refined Japanese feel. The Private rooms are available for groups of 2 or more.

The popular dish here is tsuyu-shabu (pork shabu-shabu served in broth), where thinly sliced pork is swished through hot water and enjoyed with a special Japanese style dipping broth made with white leek and yuzu chili pepper.
Tsuyu-shabu uses plenty of carefully selected bonito flakes and kombu kelp. The pork fat is said to taste light, which makes it easy to enjoy.
Photograph:もふゆか
For beef lovers, the recommended choice is shabu-shabu made using only A4 to A5 rank Special Omi gyu (Omi beef), one of Japan's three great Wagyu brands.
They also offer a course where you can compare Omi gyu and Hakkinton pork. Omi gyu is well known for its rich meat flavor and its nice melt-in-your-mouth texture.
asap2020
The top recommendation here is of course the Hakkinton pork shabu-shabu! When you enjoy Hakkinton pork as tsuyu-shabu (shabu-shabu in broth), the sweetness of the fat gently spreads out and overlaps with the rich flavor of the dashi, creating a surprisingly refined taste. With just a quick swish, it turns meltingly tender, and the finish is so light and tasty that you will not be able to stop eating. The green onions served with it are also excellent. You can also order extra portions.

I enjoyed shabu-shabu for lunch. The style here is to dip very thin slices of meat into a Special Japanese-style dashi (broth), and the gentle umami spread across the palate with an elegant taste. The service was polite too, and it felt like a lunch experience with a Special touch.

The shabu-shabu menu is popular for using Matsusaka-gyu (Matsusaka beef) from Mie Prefecture rated A5 and A5 Kuroge Wagyu, letting you fully enjoy the natural flavor of the beef.
It seems each person gets their own Hot Pot for shabu-shabu, even in a group. People like that they can eat at their own pace without worrying about others.

For shabu-shabu, they also offer the brand pork Matsusaka Pork from Matsusaka City in Mie Prefecture.
Matsusaka Pork is known for its rich, sweet fat, which pairs perfectly with shabu-shabu. There is also a dashi shabu-kai seki (broth shabu-shabu course meal) menu where you can enjoy both Matsusaka Pork and Kuroge Wagyu (Japanese Black beef).

Their shabu-shabu, made by quickly swishing top quality pork through hot water and enjoying it with a traditional dashi broth passed down from Kyoto, is very popular.

Shabu-shabu is served as part of a kaiseki (traditional multi-course meal) course alongside seasonal dishes that reflect the four seasons. The cooking has a creative touch, and every dish is said to be refined and delicious.
They can also accommodate ingredient changes based on guests' requests. They also offer options such as celebration kaiseki and vegan kaiseki, and the wide selection of course menus is also well received.

These pigs are raised on fermented feed with a yogurt-like texture, and the meat is said to have fine muscle fibers and a tender mouthfeel. The sweetness of the fat is also part of its appeal.

To finish, the restaurant also recommends its signature soba (buckwheat noodles), which the owner hand-cuts fresh every day.
They use different soba flour depending on the season, so you can enjoy the flavor of the soba at that time of year. They also make their own soba dipping sauce, and guests say the thin noodles go down nice and easy.

This restaurant somehow gets better every time I visit. Everything is good, from the soba to the tempura. They even turn the shabu-shabu broth into zosui (rice porridge). I love how carefully they make each small pot into zosui one by one. Every kobachi (small side dish) is tasty too! I could finish a whole bowl of rice with just the goma Sea Bream in the kobachi. This is my top pick lately♪

You swish and cook it yourself. The shabu-shabu is served in a richly flavored dashi broth, so much so that you hardly need ponzu sauce. They offer a shabu-shabu course menu featuring kinkaton (Kinka pork), which is raised in only two places in Japan.
