I had a shabu-shabu course enjoyed with dashi broth instead of dipping sauce. As you would expect in Ginza, the restaurant had an elegant atmosphere, with careful attention to plating and tableware, and the Private room was a place where I could relax at ease. Ginza Tsuru

The main dish, the shabu-ni with Wagyu Strip loin, was flawless. Maybe because I’m getting older, courses have started to feel a bit heavy lately, but this one was just right, and if anything, I wanted a few more slices of meat. Haha. The Yukihotaka kama-taki gohan (pot-cooked rice) impressed me the most personally. White rice cooked in a pot really is the best!

I had the Akagi Course shabu-shabu. It was a course meal made with seasonal ingredients at their best, and the meat was tender and delicious. Personally, the most delicious dish was the chawanmushi (savory steamed egg custard) that came first. The dashi broth was just so good...! I thought I’d love to go again when the season changes.

Gyuan

I visited at lunchtime. Since there were many of us, we asked for a Private room. The spacious fully private room was very comfortable. I was torn between the sukiyaki and shabu-shabu course for lunch, but the sukiyaki made with wataame (cotton candy) was unusual, so I decided on the sukiyaki. This was the one thing I absolutely wanted to eat when I came here! It comes with plenty of vegetables too, which made me really happy since I always crave veggies. It was my first visit, and I was very satisfied with both the nice atmosphere inside and the food and service. I ordered the Karen Gozen set [Kurobuta (Berkshire pork) seiro-mushi (steamed in a bamboo basket)], and with its many small side dishes served kobachi style, I got to enjoy a variety of flavors. The All you can drink menu was very well stocked, with a sparkling wine toast and Japanese sake, and every dish was delicious, so I was very satisfied! Hyoki Ginza Honten

The vegetables are tasty too, and best of all, the sesame sauce has an amazing flavor. Even if you use quite a lot, it hardly gets watered down. The best vegetables are the mushrooms and shirataki (konjac noodles).

Overall, all of the meat was delicious, but the one that really stood out was the premium Wagyu. It was thinly sliced and had a melt-in-your-mouth taste. The Yonezawa pork loin and pork belly were also tender with just the right amount of fat, and tasted great. Since it was All you can eat, I ended up trying a little too much of everything and felt Manpuku for the first time in a while.
