This is the traditional Neapolitan dough-making process, where the dough is gently kneaded and allowed to ferment at room temperature in a wooden box. Since it is kneaded gently by hand to avoid putting stress on the dough, it results in a light and soft texture. The short fermentation time allows for a stronger aroma of wheat to be experienced.

The stone oven, which reaches 500 degrees Celsius using only wood fire, bakes in about one minute, resulting in a crispy exterior and a chewy texture. The oven was custom-made by a craftsman from Naples and has the same design as the original Poppolo in Naples.
