◆出色の一皿に変えて
以前の店でお伺いしたときはリーズナブルなお昼を頂いて、
とにかくのどぐろと熱いしゃりの合わせの印象が強かった。
今回は夜にお任せでフルで頂いて、
その力強くて素晴らしいテンションに
佐竹さんの凄さが全然分かっていなかったと
自らの不明を恥じた。
鯵 当たり葱は
鯵のパキッパキの口当たりが心地よく、
小肌は
青魚ならではのシュッとした潔い旨みで、
車海老 帆立のおぼろは
車海老の茹でてから冷ました硬めの口当たりと甘さが立って、
墨烏賊は
ツルンともっちりが相半ばした歯ざわりから滲む甘みが絶妙で、
大トロは
喉の鳴るような色つやそのままの
脂のとろりとしたとろけ具合が見事!
そんな選り抜きのネタを支えるしゃりがやはり凄い。
米の硬さがシュアで、一粒一粒がピンと立って、
噛んだときにはしっとり粘りが有るのに
口に入れるとパラッとほどけるバランスの良さに
酸味がキリっと利いている。
今回はしゃりの熱さだけが目立たず、
よりネタそれぞれにフィットした温度感に寄せているのも
印象的だった。
強く熱く、そしてしなやかに進化した佐たけさん、
またぜひ伺いたいと思う。
