住宅街の一角にひっそり佇む、完全予約制の近江牛専門店。
こちらで味わえるのは、最高峰の市場でも滅多に出回らない「純血但馬の近江牛」。店主のご実家は名高い「マルキ 福永喜三郎商店」。その特別なルートゆえに扱える、まさに“幻の近江牛”です。
同じ牛を扱うのは京都の名店「くいしんぼー山中」さんのみという希少性。肉好きなら一度は訪れるべき、近江牛の聖地です。
「霜降りよりも旨み第一」という信念のもと育てられた雌牛の赤身は、一噛みごとに深く力強い旨みが広がります。
てっちゃんやトリッパなどの内臓も驚くほど新鮮で上品な仕立て。ホルモンが苦手な方でも美味しく楽しめる完成度です。
ステーキは脂を抑え、赤身の旨味を存分に引き出した仕上がり。ハラミ、マル、マルシンと食べ進めるごとに、「肉の本質とは何か」を教えられる感覚。霜降り信仰に慣れた舌に、鮮烈な一石を投じます。
圧巻だったのは、スペシャリテの自家製ハンバーグ。ナイフを入れた瞬間、溢れる肉汁と赤身の甘みが口中を満たします。ご飯に肉汁をかけ、リゾット風にして頬張れば、幸福感が一気に押し寄せます。
土鍋で炊き上げる丹後市産の銀シャリは香り高く、粒立ちも抜群。
大根醤油漬け、ニラとキャベツのナムル、ユッケといったご飯のアテがまた絶品で、思わず3杯もおかわり(笑)。肉とご飯、この黄金コンビの前では何も敵いません。
追加で頼んだ高麗人参のスプラウトは、好みの問題もありますがコースの流れからは浮いた印象。
また今回は個室席だったため、次回はぜひカウンターでライブ感ある調理を楽しみたいところ。
ちなみに守山駅近くでは、こちらのハンバーグを使ったキッチンカーのハンバーガーも展開しているそうで、そちらも気になります。
都心なら倍額は下らないクオリティの近江牛コースが、ここ守山で楽しめる幸せ。
希少な純血但馬の近江牛と、赤身の旨味を極めた料理に出会える唯一無二の場所。
