百年橋通り手前の静かな通りにたたずむ寿司店。
博多駅筑紫口徒歩15分。2013年9月3日オープン。
カウンター7席。禁煙。予約可。カード可。駐車場なし(近くにコインパーキング)。
夜は事前の予約要。夜は10000円(税別)のおまかせ。
営業時間12:00~13:30、17:30~21:00。定休、月曜。
博多鮨の名店、やま中で修行をした店主の店。
博多駅の近くでもあり、ビジネス後にプライベートで立ち寄り。今年2月のことです。
雨の夜の予約訪問。
ビルの1階の路面店。
白い暖簾が迎えてくれます。
硝子のドアは中が見えますが、客席は見えません。
店内は奥に長く、入っていくと通りに帳場、奥にカウンター席が続きます。
朱色の壁に白く映る木のカウンター。席間は広くは無いですが不快でもなく。
カウンター廻りの雰囲気は、やま中本店に感じが似てます。
ご夫婦で頑張られているようですが、この時は奥様は産休。女性スタッフさんが一人手伝われていました。
屋号と同じ、店主は香坂さん。
鮨はおまかせのコースのみ。
飲み物はメニューがあり価格が表記されてます。
ビール、焼酎、ウイスキー、ワイン、日本酒は多めに。
いつもの飲み方で、泡を一本と日本酒をいただきました。

酒飲み心を擽るおつまみ。
梅や味噌が出てくるのが嬉しいですね。
炙りものは、つけ場にある七輪を利用されていて良い香りに。
換気も上手くされてます。

指拭きと鮨用の陶器皿が用意されます。
新生姜のガリも小皿で。減ったら足してくれます。
鮨は仕事がしてありそのままいただく。煮切りの風味が良い。
シャリは小ぶりで常温。酢の感じが丁度良い。

・汁もの…和布蕪(メカブ)ミンチのすり流しの赤出汁。隠し味に白味噌。美味しい!

鮨の個数は多くはないですが、価格とのバランスでは良いと思います。
満足度は高いです。
出されるお茶は、ほうじ茶。「やま中」出身の方だとこれでも分かりますね(^^

中は綺麗に種がとってありました。良い具合(^^

香坂誠二さんは、やま中JR博多シティ店の開店準備に携わった後に、独立開業。
大将と言うより、お兄ちゃんと言ってしまう若さですが、やはり一国一城の主。
創意工夫は楽しいものがあります。
口数は多くなく、聞くと的確に丁度いい感じで明るく回答してくれます。
気を遣わせない店主、雰囲気は重たくなくて、同行者との時間を楽しめる感じ。
明朗価格で安心。ぜひまた、夜の利用を。
