Food Aojyu's Commitment to Dried Sardines
At Aoki, we use two types of niboshi: dried sardines and dried mackerel. To ensure we always have the best quality, we source from various regions, focusing on Kujukuri, the Seto Inland Sea, and Nagasaki, blending them based on their condition. We pay close attention to the proper handling, preparation, and simmering times for each ingredient, including niboshi, pork bones, and chicken carcasses. We carefully control the temperature, timing, and order of cooking, as well as the arrangement of ingredients in the pot. Once the soup is finished, we strain it and rapidly cool it before refrigerating, keeping the umami at its peak.

At Tachikawa Seiju, we offer a 【Free Service for Students!! Choose one item from the following】 all day long. High school students, university students, and vocational school students can present their student ID to choose one item from a selection of extra noodles, half rice, or various toppings! Additionally, on weekdays (during lunch hours) from 11 AM to 2 PM, we offer 【one small bowl of rice】 for free. From 11 AM to 6 PM, 【takana (pickled mustard greens)】 is free. From 6 PM until supplies last, 【spicy bean sprouts】 are free. We are pleased to provide these services at no charge. Please take advantage of them!
