ChefTetsuya Tsukada - Delicious sushi from Fukui preserved by two generations of father and son
Born in Fukui Prefecture in 1982. From a young age, he grew up watching the back of his father, a sushi chef. After graduating from high school, he joined Sapporo's famous restaurant "Sushizen". He endured rigorous training and studied for six years. After that, he made a U-turn to his hometown of Fukui to take over the restaurant as the second generation of Sushi Jubei, which has been in business for more than 40 years. It was reopened in October 2013 after a restaurant renovation. In this way, "Sushi Jubei" began to write a new history with the young general. The style of nigiri is "standing back (Buddhist altar return)".

The chef himself visits the fishing port several times a week to select the freshly caught local fish. He is particularly particular about tuna, carefully selecting the most delicious type from all over Japan for each season. Sometimes, he serves seasonal fish delivered from a familiar supplier in Hokkaido, where he trained. The red vinegar rice has a strong sour taste, but also a gentle sweetness. It goes well with the sushi toppings, which have been aged and condensed to give them a rich flavor. It is orthodox sushi, with a good balance between the flavors, without each being too assertive.
