Single origin, single variety. Yukihotaka (Koshihikari) from Kawaba Village, Gunma Prefecture. Koshihikari from Kyotango City, Kyoto Prefecture. Ofukumai from Iinan Town, Shimane Prefecture. By visiting rice-producing areas, we understand the environment in which the rice is grown and create sushi while imagining its background. Using rice from different regions and combining it with three types of vinegar (white, rosé, and red), we maximize the original flavor of the rice.
