Recently, I visited a wood-fired Spanish restaurant in Karuizawa that has been gaining attention.
It's about a 10-minute drive from Karuizawa Station.
I must say, it exceeded my expectations!!!
The dish featuring rainbow trout, salmon roe, and wild mushrooms was impressive, as was the perfectly cooked Aunon free-range pork. The meat had a wonderful texture and flavor, with a refined taste in the fat.
For the finale, I had the rice dish made with caldo, which was so delicious with its perfectly balanced broth that I ended up having three servings.
The dessert centered around chestnuts and the coffee were also delightful.
It seems that in Nagano, good game meat often goes to Naz or Yuzuki first, but they manage to source amazing ingredients through their unique channels.
The non-alcoholic pairings were all crafted with aromas and spices that complemented the dishes, which was quite interesting.
The chef, who is only 29, has a great personality as well.
I look forward to coming back in winter to enjoy the bear dishes!
