Tsubomi is a Japanese-style cafe known for kakigori (shaved ice), located along a street near Kanazawa 21st Century Museum of Contemporary Art.
The interior, with table seating, is said to be a calm space full of charm. While looking out at the garden, you can enjoy Japanese sweets made with carefully selected ingredients and a lot of time and effort.
Photograph:a8902476643
The popular kakigori (shaved ice) called Tsubomi-gori is said to come piled high with fluffy, freshly shaved ice, making it very satisfying to eat. The syrup comes on the side, so you pour it on yourself before eating.
In addition to two standard Japanese style options made with matcha and kuromitsu (black sugar syrup), they also offer limited time seasonal menu items featuring seasonal fruit.
Photograph:とってぃ!
The "Hon-kuzukiri (special kuromitsu (brown sugar syrup))" made with hon-kuzuko (genuine kudzu starch) also seems to be popular, with a smooth texture that goes down easily. It also has a pleasantly chewy bite. You eat it dipped in kuromitsu, which is said to have a refined sweetness.
Every sweet comes with hojicha (roasted green tea) as part of the set.

• Tsubomi no Kori Special matcha and azuki red beans
It was served quite quickly, and the syrup was the kind you pour on yourself. I first tasted the syrup on its own, and it had a nice balance of sweetness and tea bitterness, made to pair well with shaved ice. Azuki red beans were packed inside the ice, and they were not overly sweet, matching the syrup well.

The small interior has a calm atmosphere, and the kakigori (shaved ice) looks beautiful, with delicate combinations of fruit and cream. The seasonal lineup is also extensive, and each one gave the impression of being carefully made. The texture of the ice was light and airy, smooth on the palate, and the syrup had a refined natural sweetness.

Rakugan Moroe-ya Nishi Chaya Karyo Ajiwai is a historic wagashi (traditional Japanese sweets) shop founded in 1849. The main focus is takeout sales at the restaurant, but there is also a small eat-in space at the back of the restaurant where you can look out over the garden.
It stands in Nishi Chaya-gai (Nishi Teahouse District), about an 8-minute walk from Hokuriku Railroad Nomachi Station.

A key feature here is that the menu changes between summer and winter. In summer, you can enjoy cold Japanese sweets like kakigori (shaved ice).
The photo shows the “Uji Kintoki Kakigori,” topped with Uji matcha syrup. Inside the light, airy shaved ice is chunky sweet azuki red bean paste. The matcha and the red bean paste are said to go perfectly together.
Photograph:chich62575
In winter, they serve warming Japanese sweets, and one of the most popular is Dainagon azuki zenzai (sweet red bean soup with mochi), made with a hot soup of simmered azuki beans and enjoyed with mochi.
A special feature is the hibachi (charcoal brazier) set at the table, where you can grill the mochi yourself until nicely browned. It is said to have a refined taste with mild sweetness.

It was still hot that day, so I had kakigori (shaved ice). It was a simple plum kakigori, but the syrup was very good. Since the ice cooled me down, I added namagashi (fresh wagashi confection) and usucha (thin matcha). The sweet that day was kuri-kinton (sweet chestnut paste), and it was really delicious. It might be the very best kuri-kinton.

I ordered wasanbon (fine-grained Japanese sugar) kintoki kakigori (shaved ice with sweet red beans) and an iced green tea. The iced green tea came with a sweet shaped like a chestnut. The wasanbon syrup and kintoki had a gentle sweetness, and the rakugan (traditional pressed sugar sweet) and tea were both delicious♪ Since it was a weekday, it was not crowded, and the staff were very welcoming, which made for a happy time♪

Not only is everything delicious, but the cute-looking parfaits are also popular. You can enjoy two kinds: the “matcha parfait” recommended for matcha lovers, and the “Kaga bocha (Kaga roasted stem tea) parfait” made with Kaga bocha.
Both parfaits are said to have a rich tea flavor and taste great.

Kakigori (shaved ice) is great in the middle of summer. The price is reasonable too, and unlike the more modern evolved styles of kakigori you see these days, they make the syrup from traditional fruit, leaving some of the fruit's tartness for a slightly more grown-up taste. It was a great meal.

A relaxing tatami room with a calm atmosphere that puts you at ease. It was very hot, so we ordered kakigori (shaved ice). Matcha Uji Kintoki and hojicha kintoki. Both came with shiratama (rice flour dumplings). As I kept eating the hojicha kintoki kakigori, I found that the very bottom of the bowl was Uji matcha flavored. Both the kakigori and the kintoki were very delicious.

It was very hot outside, so I was glad I could eat kakigori (shaved ice) in a cool room. It was very large, and the matcha kakigori had anko (sweet red bean paste) and jelly underneath, which was very good. After I finished eating, I felt quite cooled down, so it made for a nice break.

They had a great selection of Kaga bocha (roasted twig tea from Kaga) lattes and parfaits, plus kakigori (shaved ice) in summer, so I had the yuzu kakigori. Overall, the sweetness was mild, and my older companion also liked that it was not too sweet, so we came back and used the same place twice.
