For the shimaaji (striped jack), it doesn’t come with yakumi (condiments) like ginger and green onion, so you can enjoy the shimaaji itself, and it tastes very fresh. The fresh salmon came in two cuts, back and belly, so I chose the back. Since it’s the back portion, it is lighter than the belly and has no off notes, making it an easy-to-enjoy salmon.

Seijiro Hirosaki Ten

It was an extremely snowy day, so I got in for lunch without waiting in line. Service is generally fast, and the staff are friendly. They always have a wide variety of tuna, salmon, hikari-mono (silver-skinned fish), shellfish, and more.

Beni Salmon (Aomori brand salmon) is a brand salmon from Aomori produced in Shingo Village, with strong umami and just the right amount of fat, making it very tasty. Since the salmon was so good, we added a gunkan sushi topped with Nakaochi from the Beni Salmon later on. Next came the seasonal gunkan with soft roe. The creamy soft roe, packed with umami, tasted amazing and made us want some Japanese sake.

It was crowded at lunchtime, but I somehow got in and, in true Aomori style, had Oma-san (from Oma) chutoro and otoro. The chutoro melted in my mouth the moment I took a bite, yet still had a slight bite to it, and it was delicious. The hata (grouper) and kajiki (swordfish) were excellent. The kajiki in particular was rich with fat, and while I do not usually eat it that often, I recommend the kajiki here.

I ordered the bafun uni (short-spined sea urchin) while freaking out over this price for just one piece, but I was totally Manzoku with both the amount of uni and its rich flavor! While I was waiting for my order, some akagai (ark shell clam) came by on the belt. The color was beautiful, and when I grabbed it, it had a great crunchy texture and tasted delicious.

おっちょこマダム

The set that let us fully enjoy maguro (tuna) was just so good. The broth in the ichigo-ni (sea urchin and abalone soup) was excellent. The small squid Rice bowl was heaped with squid and ikura (salmon roe). The nigiri with ika no mimi (squid fins) had an interesting crisp texture. The geso (squid legs) was also tasty, and the iwashi (sardine) was rich with fatty flavor and very good. I was happy to enjoy all kinds of luxurious dishes from lunchtime.
