[Chichibu, Saitama] Restaurants with Great Soba
Honkaku Teuchi Wahei Soba is a restaurant located a 10-minute walk from Chichibu Station on the Chichibu Main Line of the Chichibu Railway. The owner trained at well-known Japanese restaurants before opening this place.
The interior, which incorporates reclaimed wood from an old kominka (traditional Japanese house), is said to have a pleasant atmosphere.

A popular menu item is the local Chichibu specialty, kurumi soba (buckwheat noodles with walnut dipping sauce). It is a style where inaka soba (country-style buckwheat noodles) is eaten with a dipping sauce made with ground walnuts.
The sauce has a slight thickness and a smooth feel on the tongue. Because the sweetness is kept low, the flavor of the soba stands out.
Photograph:にゃんはる。
They also offer set meals that pair dishes made with local ingredients and soba.
The “takikomi gohan (seasoned rice)” is made with fresh chestnuts from Chichibu instead of candied chestnuts. The appeal is that you can fully enjoy the natural flavor of the chestnuts.

・Kurumi soba
The balance of the slightly thick soba, close to inaka soba (rustic buckwheat noodles), and the mild rich flavor, aroma, and texture of the kurumi-jiru (walnut dipping sauce) is great. They go well together✨

・tenzaru seiro (chilled soba with tempura)
After about a 10-minute wait, the soba and tempura arrived. The soba was not especially thin, with a nice buckwheat aroma, and the soba dipping sauce had a mellow flavor without a sharp edge, and it also served as the tempura dipping sauce.

The "Inaka Soba" is said to use unshelled buckwheat sourced from contracted farmers.
With its extra-thick flat noodles, the aroma of the soba comes through directly. Reviews also say, "The rough texture of the buckwheat groats is addictive."

The lunch set with soba and a mini Rice bowl also seems to be popular.
The most popular menu item is the "soba and chicken tempura Rice bowl set." In addition to tender and juicy chicken tempura, the tempura Rice bowl also comes with vegetable tempura such as broccoli and kabocha (Japanese pumpkin).

First of all, the soba (buckwheat noodles) is really good! It was well worth the wait. When I took the first few bites of just the soba, it had a great aroma, a nice firm texture, and a fresh feel. I had delicious soba for the first time in a while.

The zaru soba is white Sarashina-soba (thin buckwheat noodles), and it has a firm texture and tastes great. The soba dipping sauce has the aroma of carefully ground katsuobushi (dried bonito flakes). The sobayu (soba cooking water) is good too, and it comes with an elegant umeboshi (pickled plum).

You can enjoy freshly hand-cut soba made every morning from Hokkaido-grown stone-milled soba.
The top recommendation is the "Soba Gozen set." Along with zaru soba, it comes with things like soba salad, soba berries dressed dish, and tempura. The soba has a firm bite and a slight salty taste, according to reviews.

The "Tonkichi Gozen set" is a set with tonkatsu and a mini serving of zaru soba (cold buckwheat noodles on a bamboo tray).
The tonkatsu is said to carry on the taste of Tonko, a tonkatsu restaurant once loved in Omiya. It is nicely tender and very satisfying to eat.

・Tempura and tororo-jiru (grated yam soup) set
I couldn’t remember the last time I had tororo soba, but when I tried it, I was blown away by how good it was✨✨What makes it great is that you can enjoy the soba in two ways: one with soba sauce poured over the tororo, raw quail egg, and shredded nori, and the other in the usual way with wasabi and green onion added to the dipping sauce

The "Kamo Nasu SOBA" has been a popular menu item since the restaurant first opened, and it uses kamo (duck) from Iwate Prefecture and vegetables from Saitama Prefecture.
The kamo topping is seared on the surface, and its rich flavor fills your mouth.

The interior is quiet and calm. The soba noodles are on the thin side with a firm texture. They have a nice bite, just the way I like them. I ordered a set that came with a mini tempura Rice bowl. The tempura Rice bowl was seasoned well and felt satisfying. This is just the right place when you want to take your time and enjoy soba.

・Kurumi soba (buckwheat noodles with walnut dipping sauce)
The walnut dipping sauce is rich and delicious. Of course, the regular soba dipping sauce is also delicious. And the maitake (hen-of-the-woods mushroom) tempura is super crispy and delicious! I ate most of it with salt. Just a little with tentsuyu (tempura dipping sauce), too. Both are delicious. I also had sobayu (hot soba cooking water)...it was thick and rich. It was a very Manzoku soba lunch.

I had been curious about this soba restaurant for a long time, so I finally stopped by. Since it was still the cold season, I ordered a hot soba that day. There were lots of different kinds of soba to choose from, so it was hard to decide, but I went with kamo (duck). The thick duck meat was tender and tasty.

・Two-type assortment
I visited for the hand-cut soba, but the restaurant also seemed to be promoting its udon, so I went with the two-type assortment. The soba was thin-cut noodles with a fresh, silky feel on the tongue. Slurp them up without dipping anything on them, and you get a rich aroma too. The udon was smooth and had a firmness like Musashino udon (firm udon noodles). Personally, I liked the chewy bite. Both were delicious.
