If it’s your first visit, the first thing you’ll want to order is the local ramen specialty, Betokon Ramen, which was created at this restaurant in 1969.
This bowl is packed with garlic, garlic chives, and bean sprouts, with a touch of ichimi (ground chili pepper) for heat. The soy sauce based soup is said to be surprisingly light.

For people who are not good with spicy food, the Shio Ramen "Omen" with simmered eggs is also recommended.
This salt based ramen is made by simmering vegetables and finished with fresh eggs, and it is said to be appealing for the flavor of the vegetables and the gentle taste of the soup.

The moment the Rice bowl arrives, your spirits lift at the sight of plenty of garlic, crisp bean sprouts, and a heap of garlic chives. The soup has a soy sauce base with rich flavor, yet it is surprisingly easy to drink. The sharp kick of heat adds a nice accent, making this a perfect bowl for a cold day or when you are tired.

The interior is spacious, and there are koagari (raised seating area) seats in the back, creating a calm atmosphere. Some spots let in natural light from outside, so the space is surprisingly bright. The counter seating is U-shaped, with a comfortable amount of space between seats. It was designed in a way that made it easy to sit even when dining alone.

The pure white color of the soup makes a strong impression, and one sip brings a rich yet refined aftertaste. Some reviews even say the soup is so good that you will want to finish every last drop.

If you want to enjoy a simple bowl with a rich soup made from jidori (free-range chicken), the "Tori Shoyu Ramen" is just right.
The soy sauce soup, packed with chicken stock, is said to be light yet full of deep richness. As with the tori paitan, you can also choose options with extra meat or a soft-boiled egg.

The tori paitan (creamy chicken broth ramen) is a bowl packed with the slow-cooked umami of chicken and vegetables. From the first sip, you get a rich, deep flavor, but it never feels too heavy and the finish is surprisingly clean. It is the kind of bowl that keeps pulling you in with every sip, and before I knew it, I had finished every last drop. The noodles are whole wheat noodles made specially for the tori paitan. They pair well with the soup, and it is also nice that they have a satisfying bite.

・Chicken Shoyu Ramen
Start by tasting the soup. The soup brings out the chicken stock well, with a nice balance of soy sauce sweetness and saltiness. The flavor is slightly on the strong side, but it pairs well with the thin, firm noodles. The pork chashu, packed with umami, is served slightly rare, making it juicy and full of flavor.

Lanzhou ramen had a first-time kind of flavor, with medicinal herb spices working through the beef bone broth, and cilantro adding a fresh new touch. It is also good to add black vinegar and change up the flavor. You can choose from 8 different noodle thicknesses. The fried rice set is very filling and gives you great value with plenty to eat.

・Lanzhou Horumon Ramen + Curry Fried Rice
The curry fried rice had a mild flavor, and for the Horumon ramen with pakuchi (coriander), I chose the No. 6 kuan (thick flat noodles). They were even wider than kishimen (flat wheat noodles), and the noodles themselves also had great flavor. I expected it to be spicy, but it was not that hot, and the taste was nicely balanced, so I felt, "So this is what Lanzhou ramen is like," and it was a great learning experience.

For the Rice bowl and noodles you can choose, I went with the roast beef Rice bowl and kogashi shoyu (charred soy sauce). I was a little surprised at how much faster it was served than I expected. Kogane no Taiwan Men (Golden Taiwan Noodles) lets you choose from four spice levels. The "Umakara" chosen on this day had good umami along with the heat, and it was said to have an addictive flavor.
For those who like spicy ramen, the hottest level, "Jigoku," is recommended.

The Taiwan ramen had a standard level of heat, but it was nicely spicy enough to make sweat pour down my face. The ajitama (seasoned soft-boiled egg) and chashu (braised pork) were also delicious. It looks like there are other ways to customize it too, so next time I want to try the soupless Taiwan ramen. The fried rice was also tasty.

I had Taiwan Ken-san no Taiwan ramen. From the first sip, the chili pepper heat slowly spreads, making it spicy yet deeply satisfying and addictive. The rich flavor of the ground meat and nira (garlic chives) melts into the soup, giving it a nice kick along with good depth that never gets old. The noodles mix well with the soup, and the more you eat, the more a pleasant spicy heat brings out a light sweat.

I’d been curious about this place for a while, so I came here on purpose! I had fried rice and ramen for lunch. The flavors suit the Japanese palate, and I finished it in no time. It came with pickles, and I could eat in a raised tatami seating area, which somehow made the place feel really relaxing!

I had the yurinchi set meal (fried rice). Since it was lunchtime, there were quite a lot of customers. The yurinchi was very tender and nicely crisp, and it was delicious, while the fried rice also had a simple seasoning that worked well♪The small side dish of mapo tofu was authentic and spicy, but very tasty.

The restaurant especially recommends its "mala tosakumen (spicy shaved noodle soup)," a carefully made ramen dish with noodles Homemade from the dough.
The hand-cut noodles use no additives at all, and they are boiled quickly after each order comes in. The flat, pleasantly chewy noodles are said to be very good.

They also offer a wide selection of noodle dishes, and reviews say the "Shoyu Ramen" is popular as well.
It features a soup with a strong katsuobushi (bonito flakes) broth and tender chashu (braised pork), making for a simple yet Manzoku flavor. For an extra charge, you can change the regular noodles to toshomen (knife-cut noodles).

・Mala toshomen (spicy hand-shaved noodles)
The mizuna (potherb mustard) and bean sprouts piled high in the bowl add color and make it look appetizing at first glance. The toshomen have a pleasantly chewy texture and go perfectly with the soup. The soup has a deep, spicy kick with the bold flavors of spices like sansho (Japanese pepper) and cinnamon, making it irresistible for anyone who loves spicy food.

Taiwan ramen looked bright red and obviously spicy, but when I ate it, it was not like that at all. It had a light tang and a clean heat, and it was tasty. The fried rice had green onion, chashu (roast pork), egg, and a fairly strong seasoning. Since summer is the season when you sweat a lot, I thought it was just right.

Fukatei is a popular spot where you can enjoy a wide range of izakaya dishes and 100 kinds of alcohol. Many people also stop by at night just for A la carte ramen.
Modern jazz plays inside, creating a chic and mellow atmosphere. The restaurant has both counter and table seating.
They offer tonkotsu ramen (pork bone ramen) in three varieties: soy sauce, salt, and miso, and you can choose the noodle firmness, seasoning strength, and amount of fat to suit your taste.
The chashu (braised pork) looks tender and almost melting in texture, with the seasoning fully soaked into the meat. The photo shows the "tonkotsu Shoyu Ramen."
If you like ramen with a bold, punchy flavor, Taiwan Betokon is a great pick.
It is said to feature rich, mildly spicy soup with thick, chewy noodles, topped with plenty of nira (garlic chives) and ground meat. Some reviews also say the addictive flavor makes it hard to stop eating.

After drinks, I wanted ramen, so I visited again for the first time in a while. I ordered Taiwan ramen. I asked for it extra spicy, and it was hotter than I expected, but very tasty. I finished it all while feeling like my stomach was on fire. The generous amount of minced meat and vegetables also made it nice and filling. It was a great meal.

Mazesoba & Ramen Muramasa Hanare, about a 2-minute walk from Ajiyoshi Station in Kasugai, Aichi Prefecture, is a sister restaurant of the neighboring Teppan-yaki restaurant Muramasa and mainly serves ramen and Mazesoba.
The interior is said to combine the simple feel you expect from a ramen shop with a comfortable atmosphere.
Photograph:hana0518
The noodle menu mainly centers on ramen and Mazesoba. People say it is perfect both for a solo lunch and for finishing off the night after drinks with friends.
Among the ramen options, the especially popular “Miso Ramen” is said to be a bowl that looks as good as it tastes.
Photograph:ケメ子が行く
The Mazesoba menu is also very diverse, with unique options like "Taiwan Mazesoba" and "Mazesoba Kuro Curry."
A standard favorite is the soy sauce-based "Mazesoba Kuro." It comes with lots of toppings such as vegetables and nuts, and is said to have a rich, punchy flavor.
名古屋の林檎
Among a lineup heavy on Mazesoba and ramen, the "miso Tsukemen" stands out as something different! The rich miso flavor is deep and full, and when you dip the noodles into the broth, it feels hearty but not too heavy thanks to the umami of bonito flakes, so you can enjoy it without getting tired of it until the very end.

・Miso Ramen
A tonkotsu (pork bone broth)-based? Miso Ramen with a rich feel, and it was very good. It tastes even better after a night of drinking. It went well with the springy curly noodles. I’d like to eat it again if I go to Ajiyoshi Eki (Ajiyoshi Station) again.
