The shabu-shabu made with Hokkai Matsuba-gani (Hokkai Matsuba crab) is eaten by quickly dipping it in hot water and then enjoying it with ponzu sauce. To finish, you can also enjoy zosui (rice porridge) flavored with rich crab broth.
