It was my first time trying Himi udon (hand-stretched udon from Himi), and I really liked it. The taste, aroma, bite, and smooth texture all made it delicious. It gave me an impression close to Inaniwa udon. For my second drink, I had Toyama’s famous sake, Kachikoma. You can choose between a glass and a tokkuri (ceramic sake flask). I had the junmai daiginjo, and it was a wonderful sake with a light, smooth mouthfeel while still clearly bringing out the good flavor of the rice and water.

It goes without saying that the seafood was delicious, but the selection of Japanese sake was also quite good, so I really enjoyed eating and drinking. I also had the recommended wappa-meshi (steamed rice in a wooden container) to finish, and even though I thought I was already full, it was so tasty that I ended up eating it anyway. There are still lots of menu items I have not tried yet, so I would like to visit again.

The main dish that day was buri-shabu (yellowtail hotpot)! It really is one of the signature dishes of the Hokuriku area at this time of year. They said it could also be enjoyed as sashimi, so since I had the chance, I tried it that way first and found it rich and full flavored with plenty of fat. Then, after a quick swish in the broth, the fat spread into the dashi, turning it into buri with only the right amount of richness left.

"Sakaba Shin" is an izakaya (Japanese pub) about a 10-minute walk from the north exit of Toyama Station. The owner, who is from Aizu in Fukushima Prefecture, runs the place.

Niku Dofu to Lemon Sour Taishu Shokudo Yasubee Toyama Ekimae Ten is located on the 1st floor of Patio Sakura, a shopping mall near Dentetsu-Toyama Station. The menu also had black niku-dofu, so I ordered it without hesitation. I expected it to be very soy sauce heavy, but it surprisingly was not, and the black pepper flavor came through nicely, making it quite tasty. The lemon sour in the JPY200 range was a nice bonus too.

There is both zashiki (tatami seating) and table seating, but personally I think the counter is the most comfortable. There are so many menu items that it is hard to even take them all in, but if you leave it to the chef with Omakase, you cannot go wrong because he will serve seasonal items. The photo shows grilled buri-kama (yellowtail collar) with salt, and it was so filling that it felt unbelievable for the city, leaving me completely Manzoku.

Maybe it was thigh meat. That extra step of wrapping the skin around it gives it a plump, springy finish. Since it came first, my mouth was already filled with pure happiness. It was an amazing dish. I compared the seseri (neck meat) with salt and oni-pon (strong ponzu sauce). The seseri here had a nicely firm texture, and along with the jidori (free-range chicken), maybe thanks to the binchotan (white charcoal), I really enjoyed its bouncy bite and rich flavor.

Since I had come all the way to Toyama, I mainly ordered local specialties. I forgot to take almost any photos, so the ones I posted are of crunchy bai-gai (whelk) and Toyama Black Kara-age. I also had kan-buri (winter yellowtail), red sausages lol, and more. As for drinks, they had a good selection of Toyama sake including Tateyama, so I was able to fully enjoy them.

It was a New Year Party with the usual group. This was the best restaurant I’ve been to since coming to Toyama (Toyama). The Tateyama Pork is tender and very delicious. From the Appetizers to the salad, seafood carpaccio, and pizza, everything was great. The uni (sea urchin) beef ordered outside the course was the best. Next time, I’ll definitely come back and order à la carte.

Nihonkai Shoya Toyama Ekimae Ten is an izakaya located about a 3-minute walk from Shintomicho Station, in a spot that is also easy to reach from Toyama Station. It is the Toyama Ekimae branch of a restaurant with locations across Japan.

Our group of 5 got a table. We ordered a few light bites, including bai-gai (whelk) sashimi, and also tried the kani-zosui (crab rice porridge) to fill us up a bit more. The two orders of kani-zosui disappeared in no time between the 5 of us. It was so good that we added two more. We enjoyed eating and drinking right up until closing time. They also have menu options for solo diners, and the portion sizes and prices feel just right.

Draft beer and hiyayakko (chilled tofu). The torotaku (fatty tuna and pickled daikon) snack, today’s nuta (seafood and vegetables with vinegar-miso dressing), and fish like striped Atka mackerel are all really good. That shows how fresh it is. There are also lots of tempura, kushiyaki (grilled skewers), and oden items, so there are just too many things to eat. Across the counter is a wonderful master. Talking with him is fun too. They also have rice bowls and (assorted varieties available) set meals, and you can enjoy daytime drinking too, making this a really great place.

What really steals the show is the oden (Japanese stew)!!The oden comes out in a fairly large Hot Pot. That is a nice surprise! It has real impact. And the oden here is made with miso, you know. A full on Nagoya style miso base! It is rich, thick, and packs a punch. When you come to this restaurant, you should make the oden the main focus of your meal.

The atmosphere is still great, the food is still great, and it is still easy on the wallet, so I ended up staying a long time. Personally, the enoki mushrooms were especially good. They can also prepare dipping sauce, but the food already has plenty of flavor even without it, so you just keep eating. I came to drink, but it ended up being more about the food.

In Toyama, one thing you’ll want to eat in winter is buri-shabu (yellowtail shabu-shabu). Hot Pot dishes often have to be ordered for at least 2 people, so it’s great that you can order this from just 1 serving. It uses the belly cut of buri (yellowtail), and it’s rich with fat and very tasty. The sauces are ponzu, plus goma dare (sesame sauce) for a change of flavor! They also have a wide selection of local Toyama sake, including Haneya, a Japanese sake I like.

Since it was the day before a holiday right ahead of a long holiday break, this was our first time booking for 3 people, and we were glad to get a small room on the second floor, which felt calmer than the table seating on the first floor. From the standard sashimi (raw fish slices) to the fried dishes and grilled dishes, everything was tasty.
