The skewers are grilled just right, locking in the flavor while leaving a gentle warmth at the center. The more you chew, the more the chicken’s juices and umami spread through your mouth. I was also very impressed that the sharp tips of each skewer had been grilled off, making them easier to eat straight from the skewer.

It really takes skill to cook such heavy, thick cuts of meat so they stay tender all the way through. The sasami (chicken tender) was incredibly tender, and it was Surprising! Hinai jidori (free-range chicken from Akita), Yamagata jidori (free-range chicken from Yamagata), Nagoya Cochin, and Kokuo. Every one of them had plump meat and great-tasting fat. The cooking was spot on too. It seems they want to use a lot of vegetables from Hyogo Prefecture, and the fruit tomato that came out today was also from Hyogo Prefecture.
