A well-known place where you can really savor zairai-shu (heirloom buckwheat) in its whole soba form. They use Special buckwheat from carefully selected production regions and grind the soba seeds somewhat coarsely with a stone mill, giving them deep flavor and a nice aroma.

To fully bring out the appeal of the soba, they basically serve it on a seiro (bamboo tray).

Because this place serves soba (buckwheat noodles), they can make a dipping sauce by mixing ponzu sauce with sobayu (hot soba cooking water), then you dunk the shabu-shabu meat right in! Passing it through the piping hot dashi broth melts off the meat's fat, and eating it with the vegetables makes it even more refreshing, so I could eat it forever lol

I visited for dinner. It was nice that I could order any soba I liked from the A la carte menu. I ordered the kamo nanban soba. The duck was lightly seared, which gave it a nice aroma, so it had no off notes at all. The soba had a good dashi flavor, and it felt just right when I wanted something light. One bowl was fairly filling, and I ended up Manpuku.

Spicy daikon radish soba is my absolute favorite. It comes with lots of yakumi (condiments). The kick of the spicy daikon radish and the aroma of the yakumi really boost your appetite. The production region of the soba changes depending on the day, and this time it was from Akita Prefecture. I still can’t forget the Tsushima soba flour I had once before. I also visited with a reservation this time. There was a sign out front saying the restaurant was fully booked with reservations.

I’m so glad I chose this! It was incredibly good! Eaten as is, it had a smooth texture you would never expect from 100% soba. The bite was amazing. And the more I chewed, the more the aroma of the soba spread, along with its natural sweetness. It was incredibly good with salt. I loved it. It also came with soba dipping sauce, which was of course tasty too, but this is best on its own or with salt.

They make soba on the first floor and serve it on the second floor. The restaurant has an upscale feel and a calm atmosphere. I had the o-ebi tempura (large shrimp tempura) and ni-hachi soba (80/20 soba). The shrimp was bigger than anywhere I’ve had before, which was Surprising. The ni-hachi soba went down smoothly and was very delicious. I’ll visit again. It was a great meal.
