The piping hot, richly flavored broth soaks in with every sip—absolutely delicious! Just one taste and I felt instantly recharged. Next, the noodles: firm, smooth, and wonderfully springy. So good—I couldn't stop eating! Then the seasoned soft-boiled egg—honestly, it's so tasty I wished I could take some home. Every element, from the chashu pork to the bamboo shoots and stir-fried bean sprouts, was outstandingly delicious.

Miso Ramen with Bean Sprouts and Green Onion Topping
Crisp, slightly charred bean sprouts add a savory aroma, while the green onions blend perfectly with the soup. These toppings create just the right level of saltiness for me. Above all, I am completely satisfied with the delicious miso ramen!

It's hard to put into words, but this is a straightforward miso ramen that's simply outstanding. The broth isn't too heavy, making it delicious enough to finish to the last drop. The crisp texture of the stir-fried bean sprouts adds a pleasant accent without overpowering the noodles or the soup.

The "Miso Ramen I Fell in Love With 20 Years Ago" is known for its rich, full-bodied broth with bold flavors of miso and fat.
We recommend ordering it with the "20-Year Love Rice Bowl"—a side of rice topped with butter, cheese, and coarsely ground black pepper. Pour the ramen broth over the rice to enjoy this signature combination.

A Miso Ramen I Fell in Love With 20 Years Ago
The broth here is richer and oilier than your typical miso ramen, with a noticeably higher salt content. There’s even a note advising customers who prefer standard miso ramen to be cautious. Still, the flavor is incredibly deep and satisfying, and despite its richness, it’s surprisingly easy to finish the entire bowl without feeling overwhelmed.

Chashu Ramen
As soon as it arrives, you’re greeted by the aroma of dried sardines. The soup is rich and oily. The aromatic oil likely infuses lard with the essence of niboshi. This explains the distinctive fragrance that emerges when the bowl is served. The broth, made from pork bones and mature chicken, is deeply savory, while the bitterness of the dried sardines adds a pleasant, memorable finish.

Wonton Noodles
The soup is thick and rich, with a satisfying consistency. The wontons are made with just silky, delicate wrappers and no filling. The noodles are medium-thick, straight, and have a hearty texture that pairs well with the soup. There was also a green chili miso paste available—perhaps intended for the char siu rice bowl—but I tried adding it to the soup in the latter half, which added a nice kick.

Tokyo Ramen Restaurants that have been Chosen as Tabelog 100: Tsukemen and Soupless Noodles

Enjoy the "100"—a ramen featuring an intense niboshi (dried sardine) broth that delivers a bold, bitter umami flavor. Each spoonful of soup is irresistibly satisfying. The dish is complemented by crisp kaiware radish sprouts and firm Sapporo Foods noodles, which hold their own against the rich, concentrated broth. Among Ganko’s many limited-edition offerings, this is a standout favorite. The noodles are cooked to a firmer texture with a shorter boiling time, ensuring quick service even when the shop is busy.

ドラクエウォークしながらーめん
I always find myself eating here without fully understanding the details, but it’s undeniably delicious. From what I gather, there are two main styles: the "Elegant" type and the "100" type. The "Elegant" style features a clear, refined soup and was once referred to as "Jiyugaoka," reflecting its sophisticated image. On the other hand, the exact meaning of "100" remains unclear to me. It seems to refer to the "Akuma" (Devil) style soup, which I assume means a 100% pure soup with no added seasoning base.

Tantan Tsukemen
Start by dipping the noodles into the sesame-based broth without adding the mala paste. The noodles are perfectly coated with the rich soup and sesame sauce, delivering a truly delicious bite. The spiciness seems more intense than before, providing a noticeable kick. Next, stir the mala paste into the broth—while the heat remains about the same, the umami flavor is significantly enhanced, making it hard to stop eating. Finish with a dash of the table-side Sichuan pepper for an extra burst of flavor and enjoy every last bite.
