Pork cutlets at Karasemi Tei are prepared with an ultra-thin coating and expertly cooked, resulting in meat so tender it practically melts in your mouth. The use of rapeseed oil keeps the flavor light, yet the richness of the pork stands out, delivering an explosion of savory taste. Each cutlet is both delicately flavored and exceptionally silky in texture. Every detail, from the cuisine to the attentive and vibrant service, is dedicated to providing "the finest tonkatsu experience." Truly outstanding—perfection, in the most understated sense.

ノアマンクロウ

Nanshu Pork Fillet Cutlet from Kagoshima Prefecture

Karasemi Tei’s Nanshu pork fillet cutlet is truly exceptional. Expertly cooked, the fillet remains incredibly juicy and never dry—so much so that every bite feels almost refreshing. It's even more delicious the more you chew! While the pork loin is best with rice and feels like a big meal, the fillet cutlet is better on its own, so you can fully appreciate its delicate taste and texture.

The rich flavor of foie gras paired with a sweet and tangy sorbet is simply irresistible, making it hard to put down your glass of wine. The risotto with quail and black truffle offers a delightful texture, perfectly complemented by a sauce reminiscent of shark fin soup. The thick, succulent lobster is deeply satisfying, with a delicious broth that enhances the natural sweetness of the lobster.

The white asparagus pasta was particularly memorable, featuring rice vermicelli noodles. Throughout the meal, subtle Chinese influences were seamlessly incorporated into the French cuisine, resulting in a delicious and harmonious experience. My personal favorite this time was the roasted Harushika venison from Tanba—the preparation and doneness were exactly to my liking.
