この日は、ふらっと「魚町バル AMBROSIA KITCHEN」さんへ。
◇外観と内観
此方は北九州市小倉北区は魚町銀天街にありますバル。
外観は観葉植物が目立つ自然派のような印象。
店内もバルのような洋風レストランのような雰囲気に、花等が華やかに飾られています。
店内禁煙、店外に灰皿有り。
◇座席
1階はカウンター席と2人テーブル。
2階も同じような構成ですが、コロナの兼ね合いなのか投稿時点では両階間引中。
◇メニュー構成
オーダーしたのは以下の通りです。
・藍の鰆(1580円)
→実は前日も小倉でイベント参加があり、魚町へ。
その際にバチッと目に入ったのが店頭に掲示された〝藍の鰆〟をオススメする看板。
その当日は都合が悪かったものの、本日はこれまた小倉で一献。
という事で、ちゃっかり伺いました。笑
既に全国へと知られているブランド藍の鰆。
とある高級寿司屋さんとの協働から始まったと認識していますが、藍島という良き漁場と、熟練された漁師の成せる技が組み合わさり誕生。
文字通り、船の上で血抜きして神経〆までする事で、一切の臭みをとり、長期保存が可能となり、それを熟成させて旨味を…簡単に説明しましたが、熟成は当然、料理人の範囲。
既に漁は終了となってますので、この時期に味わえるなら熟成のみですね。
ドリンクをオーダーし、メニューを確認すると、塩焼きかアクアパッツァ(2480円)の二択。
「生が無いのかぁ。」と少々ションボリとしましたが、バルというジャンル的な都合なのかな。
また、メニューには〝これが食べれるのは日本で当店のみ〟との謳い文句まで。
まぁそんな事は無いと思いますが、熟成度合いの話なのかな。
さて、塩焼きをオーダー後はじっくり焼き、時間にして二人で一合が空くくらい。笑
登場したのは立派なサイズの鰆！
箸から伝わる柔らかさに、身はふっくらと仕上がっています(´∀｀)
トリミングはしてないようですが、味は普通に美味しい！
ポイントの臭みは、私のような素人はほぼ感じませんが、たまたま同行者はプロ。笑
と言っても、殆ど分からないレベル。
ただバルなら、せめてカルパッチョで食べたかった私ですが…それを引きずる事なく、美味しい鰆が頂けました。
