夕方まで名古屋駅近辺で仕事をして、夕食もこちらで済ませて行くことにします。
お邪魔したのは「築地青空三代目 大名古屋ビルヂング店」さん。大名古屋ビルヂングの地下1階にありました。
開店15分後ぐらいに着いたのですが、かなり予約が入っているようで、カウンターは満席。私は、テーブル席に座りました。
まずは生ビールで喉を潤しながら、一番人気だという「握りコース」をお願いしました。内容は、以下の通りです。
♦︎刺身(イサキ・金目鯛・平貝)
♦︎天然まぐろ中落ちつまみ
コースの最初は、お酒の肴から。刺身は、醤油ではなく岩塩のプレートと共に提供されました。聞くところによると、3億2千万年前の岩塩の結晶を板状に切り、冷やしてあるのだとか。そこに柑橘を搾り、上に刺身を載せていただきます。確かに、白身の繊細な味わいは、醤油よりもこちらの方がよくわかりますね。

この「車海老」は美味しかったですね。少し火を入れることにより、本当に鮮やかに旨味が活性化されていました。

単純な握りではなく、様々な技巧や調味料の工夫があり、なかなか楽しめます。

いかにも江戸前らしい三品。どれも丁寧な仕事が加えられており、深い味わいがありました。個人的には、特に「蒸し鮑」が気に入りました。

箸休め的な二品。お酒が進みます。生ビールの後は、日本酒をいただきました。日本酒もなかなかの品揃えで、しかも辛口のものばかりでした。お客様の好みと言うよりも、この鮨に合う味わいのものだけに拘られているのがわかります。中から「日高見 超辛口純米酒」「澤乃井 純米 大辛口」「三千盛 純米大吟醸」をお願いしました。量もたっぷりあり、かなり満足度が高いですね。

正に文句無しの三品でした。
ここでコースは終わりです。
♦︎生蛸刺身
まだ少しお酒が残っていたので、こちらを追加しました。やはり岩塩プレートが添えられていたのですが、初めの岩塩とは種類が違い、アンデスの赤い岩塩のようです。蛸の吸盤がたくさんあったのは、蛸好きとしては評価が高いところ。素直に美味しかったです。
江戸前の技巧と進化的な工夫が同居した、なかなか野心的で満足感の高いコースだったと思います。皆様のレビューを見てみると、ランチもなかなか良さそうですね。そちらも近い内に、試してみたいと思います。
