この日は食べ友さまと今年2月にオープンされたこちらへ。
乃木坂から徒歩5分、なんと美会さんと同じビルの1階。和服姿の女将さんが入口で待っていてくださいました。
天井が高く、白とグレイが基調のスタイリッシュなお店。中央には見事な生花が飾られています。
私はシャンパーニュ、ご一緒さまはビールで乾杯!
いただいたものは以下の通り。
◇先付「白甘鯛とホワイトアスパラガスの春巻」
熱々の春巻、アスパラガスはロアール。行者ニンニクの天ぷらを添えて。山椒塩でいただきます。
ほっくりとした食感。
◇お凌ぎ「飯蒸」
蛍烏賊の有馬煮が載っています。出汁と山椒のみで炊かれたという有馬煮。蕗の薹の素揚げを添えて。
◇お椀「蛤と北寄貝」
貝のいいお出汁!蛤だけのお出汁だそうです。貝の持つ塩味で。黄ニラとうるい。
◇お造り「金目鯛の炭落とし」
金目鯛に炭を直接押し当ててから漬けに。酢橘と茗荷を添えて。
大好きな金目鯛、脂がちょうど良く乗っています。
◇蒸し物「茶わん蒸し」
200度でカリカリに揚げた桜エビがこんもりと載っています。蒸したゆり根が甘いこと。振り柚子。
◇煮もの「宮崎牛のほほ肉」
ほろほろのほほ肉と6時間炊いたという蕪と合わせて。そして上からスペイン産のトリュフをたっぷりと!ソースは塩のみで炊いた蕪がホワイトソースのようにとろりと。蕪の甘さを楽しめます。
◇唐墨蕎麦(追加)
支店に日本そば屋さんもお持ちというこちら。それはぜひともいただいてみたい。
お蕎麦が見えないほどの唐墨・馬糞雲丹・ベルギーのキャビア・卵黄。軽く和えていただきます。
これは痛風蕎麦ですね(^^)、お蕎麦の歯ごたえもよく、美味。
◇焼き物「霧島豚のロース」
厚いお肉が3枚も!味噌を敷いて、九条ネギと牛蒡の素揚げを載せて。蕎麦の実を砕いて散らしてあります。脂が甘い。
◇お食事「すっぽんご飯・赤だし・香の物」
すっぽんを70度で濁らぬよう4時間炊いてごはんに炊き込んだそうです。胆振ガッコと赤万願寺唐辛子を細かく刻んで混ぜてあります。歯触りも見た目も楽しい。
◇甘味
せとかと苺とラムレーズンアイス。紅茶のジュレとカカオニブ・ピスタチオを砕いて。
◇お抹茶
店名の通り太陽のように明るい女将のサービスが素敵です。
傳さんにいらしたこともあるという若き大将の繰り出すお料理も素晴らしい。
女将はかなり日本酒に造詣が深く、日本酒好きなご一緒と盛り上がっていらっしゃいます。
思わず私も2種挑戦。
支店のお蕎麦屋さんもぜひ訪問してみたくなりました。
