二夜連続の訪問となったふじ味。
●口取(自家製酒盗・宗太鰹新子・本バイ)
ふじ味の店主はあまり新子にフォーカスしない。
時期ともなれば高知の和食店も客も新子を珍重がるが、宗太鰹はなかなか難しい食材だ。
劣化もなく、食材として感心できる品質となれば滅多にお目にかかれない。
そこまで頑張って新子を食べなくてもいいというのが店主の方針らしいが、今回は珍しく新子が口取りに登場している。
モチモチとした食感も、やや意地悪く吟味したものの鼻腔を突く微かな臭気もない。
本バイの大きさにも驚いたが、茹で加減にも驚く。
この丁度いい茹で具合はどこで判断するのかと感心してしまう。
最近、どこで食べても濃いめの味で茹で過ぎばかりで、家で作った方がまだマシだ。
小振りのバイで固くなっているなんて、食べさせられるのが苦行ですらある。
昨日に引き続き自家製酒盗もいい。
酒盗といえば鰹腸を塩辛にしたものだけれど、こちらの酒盗は丁寧に水洗いされた鰹腸を土佐酢に漬けられている。
これが純米酒によく合う、まさに酒盗だ。
●鰹のたたき
友人の一人が一口食べて、「これは…凄いな」と言葉をなくした。
「高知に着いてからも鰹のたたきを食べようって言わないから、なんでかなって思っていたけど、こういうことか」ともう一人も納得していた。
ここで鰹のたたきを食べてから、余所で好んで注文することがなくなった。
時期が時期だけにどうかと思っていたが、今回も上等。
●鱧の摺流し
大阪にある料理店で鱧の摺流しを食べたのはいつだったか。
説明がなかったら鱧とは気づかなかったかも知れない。
こちらの鱧の摺流しは、鱧が意図的に粗く摺られているお陰で、鱧を堪能できる。
まったりじっくりとした冷たい摺り流し。
鱧を味わいながら。
●八寸(鮎塩焼・鰻蒲焼)
串打ち三年、裂き八年、焼き一生と言われる鰻の調理。
いまさら言うまでもないが、皮の膠原繊維をしっかりと焼くことが肝心。
●無花果天麩羅
丸ごと揚げられた無花果の天麩羅。
その上には薩摩芋葉の天麩羅と大根おろし。
全員そろって、無花果はあまり得手ではないと言いつつ箸をつける。
不得手というより、どうにもはっきりしない味わいの無花果に馴染めないということだろう。
ところが、二人の口からは「これは…」という言葉がもれた。
程良く加熱されたことで無花果の甘味が増し、大根おろしを混ぜ合わせた汁との調和が深い。
●土佐あか牛のステーキ
四大和種の一つ褐毛和種といえばあか牛で有名な熊本を連想しがちだが、明治期から高知でも畜産されていた。
流通の90%を占める黒毛和種に比べて褐毛和種はあまり評価が高くないが、品種改良の努力もあって、いまでは他品種と比較しても遜色はない。
合わせたワインは Chateau Mouton Rothschild 2011。
●鯖棒寿司
時期でないことは重々承知しているが、同伴した友人の一人が「是非食べたい!」と熱望したところ、どう見ても小振りであることは否めないながらも店主の配慮で登場させてくれた鯖の棒寿司。
この時期ということを踏まえると胡麻鯖だろう。
小振りであることも納得できる。
秋冬の鯖に比べれば、やや劣ることは否めないけれど、調和という意味でバランスをとり、出来映えとしては悪くない。
友人も満足してくれたようだ。
●雲丹素麺
昨日同様の出来映え。
この出汁がいい。
やや柔らかめに茹でられた素麺は必ずしも好みではないが、雲丹と一緒に食べるとなかなか興味深い。
