We pursue the flavor of the pizza dough itself, and now we blend three different types of flour with varying grind levels, including naturally cultivated wheat and domestically produced wheat, into a single pizza dough. This results in a pizza that we are confident is delicious. We invite you to try it!
Food "Preserving the Emotions of What I Ate in Palma"
When I visited Emilia-Romagna, I encountered prosciutto and torta fritta (gnocco fritto), and the deliciousness was so overwhelming that I bought local cookbooks and experimented with recipes. Ultimately, I asked a local chef for the recipe and recreated it exactly as it is there. I highly recommend pairing it with the local Lambrusco.

At our restaurant, the wheat for our pizza is personally experienced by our staff, who participate in activities such as harvesting, sowing, and trampling the wheat to learn about the love for the ingredients. We only grind the wheat that our dedicated staff has put their hearts into within 10 days, using a stone mill, ensuring that we always use freshly ground flour for our dough. Please enjoy our carefully crafted dough.
