A pizza chef likened to a sushi chef. The dough is made from 100% Caputo flour from Italy. Not all Italian products are necessarily good, but this flour responds best to my current performance. Daily adjustments are needed for the right amount of moisture, yeast, and fermentation time to ensure the best possible outcome based on the day's conditions. The moment it takes about a minute and a half to bake, skill and experience come into play. Experience the charm of Neapolitan pizza.

At Toyosu Market, we receive fresh seafood from Marusho. Our daily menu is centered around seasonal ingredients with a taste of Southern Italy. Chef Yoshida specializes in seafood dishes and is well-versed in fish. Utilizing the procurement routes of our manager, who hails from near Tsukiji, we recommend a carpaccio featuring a selection of 3 to 4 types of fish, as well as a platter of seafood prepared in various cooking styles.
