麻布十番のフレンチ『クラージュ』
モダンでシックな内装のレストランで、新進気鋭の女性シェフの細やかな感性のフレンチと、ベテランサービスマンのナビゲーションでゆったりとした時間が過ごせます。
この日は、食の友人にフレンチレストランウィークの予約をしてもらい、３人で訪問しました。
レストランは、デザインされた石壁に囲まれ、モダンなアートを配した、おしゃれな建物の１階にあります。
店内はやや照明を落とし、落ち着いた雰囲気。ブラインドで仕切られた半個室に案内されました。
赤い色を効果的に使った華やかさのあるセッティング。期待が高まります。
乾杯はイタリアのスパークリングワインで。
アミューズはシェフのスペシャリティのクラージュサンド。ジュワッとした鴨の脂とさっぱりしたパンのバランスがよく、食欲が一気にかき立てられます。
料理は素材の取り合わせの絶妙さだけでなく、鱸に添えられたエディブルフラワーの飾りや、神石牛の付け合わせの野菜のカッティングや彩りなど、シェフの細やかなセンスを感じます。フレンチの基本を大切にしながらも少しイタリアンやイノベーティブな要素も取り入れた料理かと。
サービスの相澤さんは、極めて慇懃な物腰の中にも、親しみのある雰囲気のもてなしで、ゆったりとした時間を過ごすことができました。
これは大切なひとときを過ごすために再訪したいレストランですね。

◽️クラージュ サンド
茨城のかすみ鴨にこだわり、これとトリュフを合わせてサンドイッチにしたもの。
◽️オードブル 秋刀魚
北海道の秋刀魚。ナスとアンチョビを合わせて。オリーブの刻んだものを散らして。
南仏系、あるいはイタリアンにも通じる料理です。
◽️千葉の鱸
メインの魚はスズキ。もち米の上にポワレしたスズキがのり、上にはエディブルフラワーで華やかな印象の一皿となってます。
皿にはポルチーニ茸のソースが敷き詰められてます。一緒に口に運ぶと、ポルチーニの香りが口中に広がります。
ブルゴーニュのシャルドネとよくあいました。
◽️広島 神石牛
メインの肉は神石牛というお肉で、広島サミットでも提供されたとか。
赤身だけど脂もしっかりのっていて濃厚な味わいです。
ブルゴーニュのピノノワールと合わせました。
◽️カシス
デザートはカシスとチーズケーキ。上にカシス風味のパリッとした焼き菓子
