店内は赤色を基調としたムーディな空間。
しっとりと落ち着いたレトロモダンな大人のレストランといった感じ。

古屋シェフのスペシャリテ。
鴨ローストのスライスと黒トリュフを、自家製パンでサンド。
鴨は自家配合のエサで育ったかすみ鴨で旨味が濃くて美味しい。
◆【カマスのマリネ】
愛知産のカマスを軽く炙り、ビネガーやライムとマリネ。
その上に梶谷農園のエディブルフラワー＆ハーブを乗せて。
◆【パン】
キューブ型が可愛い自家製パン。
「courage」の焼き印付き。
◆【スズキのポワレ】
サフランの泡、貝のお出汁のソースでいただきます。
ズッキーニ添え。
アクセントに唐墨を削りかけて。
◆【神石牛】
メインは広島県産の黒毛和牛「神石牛」のロースト。
肉質は無理矢理付けた脂身ではなく、あえてA3ランク。
私にはこの位のランクが丁度良く、とても美味しくいただきました。
生姜のソース。
◆【カシス、チーズケーキ】
カシスのチュイルの下には、チーズケーキ・カシスアイス・カシスジュレが入っていて、色々な味を楽しめます。
締めくくりのデザートも赤色で仕立てて、当店の雰囲気にマッチしていました。
