There are 4 types of soba: Ita Soba - Thick and firm texture, and the more you chew, the more you can taste the original sweetness and flavor of soba. Konnyaku Soba - Soba made with Yamagata's specialty konnyaku as a binder. The thin and transparent noodles have a smooth texture and have an old-fashioned feel, and the unique texture that you won't find anywhere else has an addictive taste.It is lower in calories than soba and can also be expected to have a detox effect. It's a traditional Hosouchi udon. It is called Mugikiri because it is made by kneading and rolling out flour and then cutting it into thin pieces with a knife.It is made in the same way as udon, but in Shonai it is recognized as different from udon. Completely hand-made soba that has a sense of transparency, crispness, texture, sweetness when chewing, and aroma that hits your nose, all of which are well-balanced.
