Born in Tokyo in 1968, he is the fifth-generation owner of the sukiyaki restaurant "Ishibashi," which was established in 1879 (Meiji 12). From a young age, he admired his grandmother, who would appear in a kimono in the tatami room, and dreamed of taking over the family business as the eldest son. After graduating from university, he worked for a travel company. When the bubble economy ended and Ishibashi faced the risk of closing down, he decided he did not want to let the restaurant's history fade away. At the age of 25, he left his job and took over the restaurant from his father. While mainly responsible for the meat shop's operations, he occasionally works in the tatami room to uphold the traditions of the long-established establishment.

Founded in the 5th year of the Meiji era, the long-established "Ishibashi Beef Shop" began operations in the 12th year of Meiji as a part of the same establishment. The original store was lost in an air raid, and they faced challenges such as losing their iron pots due to wartime requisitioning. However, they overcame these difficulties and rebuilt in 1950. Today, the establishment retains the nostalgic charm of the past amidst the urban landscape. Each private room inside has a unique atmosphere, and in the summer, ice pillars are placed in the corners of the rooms, allowing guests to enjoy a visually refreshing ambiance. In this dignified space unique to a long-established shop, one can forget the passage of time and indulge in the ultimate sukiyaki experience.

You can savor a blissful moment with sukiyaki, expertly prepared by the innkeeper and the waitstaff. Guests often travel from afar seeking the taste of this wagyu beef. The iron pot, used since Showa 25, is greased with beef fat, and the meat is cooked with a secret sauce. The delicate marbled meat melts with just a bit of heat, and it is first enjoyed dipped in raw egg. To finish off the meal, you can add a rice porridge, which is exquisite with its rich flavors and the fragrant crispiness of the rice, complemented by fluffy eggs.
