休日予約し19時頃来た、店内は半分ほどの埋まり
かつて7年連続でミシュランガイドに掲載されていたお店、今は？と突っ込みたくなるが、一定のレベルであることは間違いない
5500円の本当のカルボナーラとアンガス牛のショートコースを注文、アルコール2杯飲んで、約7500円、適切な価格
コースの構成は以下のとおり
・突き出し
アオサのパン、アオサの香りが凄く、1口目から鼻に抜けていく、パンなのかモチなのか定かでないが、食感はモッチリ
・前菜の盛り合わせ
オムレツ、カルパッチョ、プロシュート、ハムなど、どれも新鮮で塩気が適度で、ワインと相性抜群
・本日のリゾット
ポルチーニ茸のリゾット、こちらもポルチーニが香ばしく、クリーミーなリゾット、つまみになるリゾットは良い
・アンガス牛ハンギングテンダーのステーキ
アンガス牛の3割しか認定されないCABの保証が付いているブラックアンガス牛らしい、なんとも情報量が多いが、良質ということだろう
赤身のジューシーさが別格、固さも柔らかすぎず適度なもので、質が良いんだなぁとすぐ分かる、味付けが最小限なのもグー
・ベーコンも生クリームも使わない、本当のカルボナーラ
メニュー名が全てを表している、イタリアではカルボナーラに生クリームを使わないのは有名な話
濃厚なのにくどくないのが狙いらしい、そのとおりクドくないあっさり気味の味、日本人が求めるカルボとは違うかもだが、この辺は好みかな
・食後のコーヒーとデザート
デザートはコースにないが追加でイタリア栗のモンブランを、想像していた紐状モンブランとは違うムースタイプ、ウマイ
主食級のメニューが多く、お手頃なコースな割に満足度は高い、前菜系は少ないけど、そのおかげでアルコールも頼みすぎずにすむ
