Food "Authentic Carbonara Without Using Heavy Cream"
In Italy, cream is not used in carbonara. It's simply a matter of "that's how it is," and not a claim of right or wrong. As long as each version is delicious, that's what matters. The dish is characterized by a "rich yet not heavy" simple deliciousness, and I felt that "the essence of Italian cuisine is to perfect simplicity" while I was there. It seems there are many who want to complain about various things, but I have been making "true carbonara" for over 20 years, and that's all there is to it.
