Breakfast at a Restaurant with a Great View

Around 8:40 AM, I headed to Beaux Sejours on the first floor.
I was greeted by Manager W and others at the front desk as I descended the stairs from the second-floor entrance.
A female staff member asked for my name.
Mr. Og guided me to a seat in the front row.
△(□) Beaux Sejours Breakfast JPY 4,900 (tax included, plus 15% service charge)
△ Vegetable and fruit drink (choice of apple juice or grape juice)

△(□) Mixed lettuce and mushroom salad with Shinshu miso dressing
△□ Yatsugatake Nobeyama yogurt with seasonal fruits; kiwi, melon, peach, orange, strawberry, and apple jam
△□ Plain omelet with truffle demi-glace sauce, side meats, and steamed vegetables; potatoes, bacon, and two types of sausages. The addition of truffle demi-glace sauce was an improvement.
△(□) Karuizawa Bakery's barley bread and croissant: The barley bread, which was not available last year, was a nice addition.
△(□) Iced café au lait (more milk, in a 2:1 ratio)
Overall, it was better than my last visit.
Exited around 9:50 AM.

Around 8:40 AM, I arrived at Beaux Sejours.
I love the view from the second-floor entrance and the experience of descending the stairs inside, but when I got to the second-floor entrance, it was closed?!
Only being able to enter from the first floor significantly diminishes the charm of this place.
Upon entering from the first floor, the entrance was unattended. I could see three staff members, but one looked my way without responding (omitting details), and time passed without anyone attending to me (I was feeling quite uneasy).
I thought to myself, "This is a low level of service..." when a sommelier named Hu noticed me, confirmed my name, greeted me with "We’ve been expecting you," and said, "Please wait as we will guide you in order." There were quite a few empty seats, but there was one group ahead of me waiting.
After the previous guests were seated, the sommelier returned and said, "I’ve been instructed to take you to the front seat, which will be available shortly."
This was my first experience being made to wait at a Prince hotel... my desire to return has significantly decreased.
As I passed by, a staff member greeted me, saying, "I’m Og from The Prince Park Tower Tokyo, Youmeiden."
A staff member named Ko asked, "Have you been served yet?" and, unaware of the situation, guided me to the front seat, explaining, "This seat offers a nice view of the pond."
I chose a vegetable and fruit juice from three options.
For the egg dish, I selected an omelet (the other option was scrambled eggs), and I ordered iced coffee.
I had requested the iced coffee to be served first, but while my companion received their hot coffee, mine did not arrive. After a while, Og came back to check on me and kindly brought my iced coffee.

I noticed the small jar of jam was blueberry, so I asked Og if there was strawberry jam, and he said there was, bringing it to me. (They alternate between blueberry and strawberry daily.)

French cuisine with exceptional atmosphere and service

Last November, I had a pleasant experience during breakfast, so I decided to visit again for dinner this time.
At 6 PM, I headed to "BEAUX SEJOURS."
I like the view from the entrance on the second floor, so I intended to take the elevator up, but I spotted the K Food and Beverage Manager at the entrance on the first floor, so I entered from there instead.
I was guided to a window-side table by Sommelier M, and on the way, I saw Mr. T, who was in charge at the main dining room in the East Wing last December, and greeted him with, "Is this where you are now?"
I received a warm greeting from the K Food and Beverage Manager again.
My main contacts were Captain H and Mr. I, with Mr. T also assisting a bit.

: The roll bread was good. Olive oil was provided, but I requested butter.
△+ Amuse-bouche; Cucumber puree with fresh sea urchin
□△ Lobster prepared Cardinal style with a mango accent,
served with a zucchini salad and caviar
: The mango was not great, but everything else was very good.
△(□) Sole and scallop popiettes with Chalon sauce
△□ Wagyu ribeye with confit shallots and its jus,
served with truffle potato mousse and vegetables
: Various seasonings were used.
△ Peach mousse in a soup style, served with passion fruit and coconut sorbet

: The financier was good. There were also cookies and chocolate.
I left around 7:40 PM.
Mr. T asked for a drink order, but (omitted).
It’s quite a charming restaurant, with a pond in front of the window, and a golf course beyond it.
The pond had an unusual overgrowth of aquatic plants, but I was able to see a family of little grebes up close, which was delightful.
Mr. H was very friendly, and he sparked my desire to return.
French Cuisine at The Prince Karuizawa
I visited BEAUX SEJOURS for breakfast at 8:30 am.
As soon as I opened the set of doors at the entrance, I was pleasantly surprised!
The restaurant is located downstairs, and the layout requires you to go down the stairs to the left.
At the bottom of the stairs, the reception was unstaffed, and there were already seven customers lined up waiting.
There were only four chairs available, and among those standing, there were customers with canes.
I could hear the prior customers complaining about the lack of assistance from the staff.
After a while, a staff member finally arrived and began asking customers in line how many were in their party, then guided them one by one.
Although I hoped to be seated at a glass-enclosed table facing the outer pond, I was instead assigned to the seat furthest to the front, closest to the restroom.
The options included juice, a main egg dish, and coffee or tea afterward.

(□) Onion cream soup
+ Salad with roast ham and cucumber (actually with lettuce as well), flavored with apple miso dressing
□ Shinshu Yatsugatake Jersey yogurt with apricot compote, served with granola: Rich in flavor and exceeded my expectations.
+ Fried egg, served with side meats and lightly cooked vegetables (other options included scrambled egg and plain omelet): The yolk was runny, and the doneness was just right. The sweet potato was surprisingly good.
Regular rolls and croissants: Three items including a regular roll, brown sugar bread, and a croissant. Given there were three items, I wish they had brought them all at once (the bread arrived along with the fried egg at the end).
The bread was served with butter, blueberry jam, and honey. Personally, I prefer strawberry jam.
+ Coffee: Properly served with milk.
I believe there were around six male staff members, half of whom might have been in charge of serving.
The decor and ambiance were nice, so if the staff's level of service improves, it could become quite a good restaurant...

At 8:45, I descended from the second floor entrance to the first floor of Beaux Sejours (I prefer this route and do not enter from the first floor).
Upon reaching the bottom of the stairs, I was greeted by Manager Wa.
My server was Mr. Og.
I was seated at the rightmost table in the front row facing the pond.
The breakfast included three types of juice, two types of egg dishes, and a choice of coffee or tea.

△ Carrot Rape Salad with Edible Flowers, dressed with carrot and lemon dressing.

△□ Yatsugatake Nobeyama Yogurt with Seasonal Fruits (melon, kiwi, orange, shine muscat, apricot).
□△ Asama Farm Blueberry Jam: Not too sour, just to my liking.
□ Eggs Benedict with Hollandaise Sauce, side meat, and steamed vegetables (with options of scrambled eggs, mixed vegetables, tomato ketchup, side meat, and steamed vegetables): The Eggs Benedict was impressively well-made.

△(□) Iced Coffee: Served with plenty of milk.
The last time I visited, it had improved from before, but this time it was even better.
Around 10:50, I was seen off by Mr. Og as I exited.
