Karuzawa is home to some of Japan's most renowned chefs, and Hermitage de Tamura is certainly among the pioneers.
That said, Karuzawa has many restaurants I want to visit, and I hadn't felt much interest in this well-known establishment, so I had never been there until now.
Finally, on the first day of a three-day weekend, I made my long-awaited first visit.
While the restaurant may not offer the visual surprises or extravagance associated with trendy French, innovative, or fusion cuisine (the plating is still beautifully done), the flavors are delicate and uniquely delicious.
Every dish in the course was delightful, but for example, the combination of Obuse chestnuts and foie gras was exceptional. The rich foie gras was followed by a gentle sweetness from the chestnuts, creating a taste I've never experienced before.
The lobster dish, while it could have been presented more lavishly with the head and shell intact, prioritized flavor and ease of eating, resulting in an outstanding ethnic seasoning. As for the chilled peach soup, it really speaks for itself…
While some French dishes can obscure the original flavors of the ingredients with butter and cream, the dishes here seem to prioritize highlighting those natural flavors. This course showcased ingredients sourced from various regions in Japan, such as eel, sea urchin, and tomatoes, allowing their quality to truly shine.
Since the ingredients change with the seasons, it’s clear I’ll need to visit regularly to experience the seasonal offerings.
