At lunchtime, the "A5 Kuroge Wagyu (Japanese Black Wagyu) koune (part of the brisket) set meal" is available. "Koune" refers to a rare cut from the shoulder brisket, with only about 2kg taken from a whole cow.
It is seasoned with a salt based sauce and is said to taste great even on its own. The balance of marbling is excellent, and each bite is said to be full of flavor.
I was able to enjoy a relaxed meal in the calm atmosphere of the restaurant. Every cut of meat that came out was A5 grade, with a truly melt in your mouth tenderness. I was especially impressed by the assortment of rare cuts, which had rich flavor.
