I visited Tonkatsu Saito in a quiet corner of Ginza. It is a small restaurant with 7 counter seats and zashiki (tatami seating), but the interior feels just like an upscale ryotei (traditional Japanese restaurant). It feels spotless, and the crisp atmosphere is so exciting...! The food comes in a set meal style, but each dish is served with care one by one, so it feels almost like a course meal.

The crispy coating felt light in the mouth and was fried just right, letting the great flavor of TOKYO X spread across the palate. From the second bite on, I tried it with sauce and rock salt, but no matter what I added, the springy texture and sweet flavor of the pork cutlet were so good that I finished it in about 10 minutes.

It had been a while since I last had a really solid rosu-katsu (pork loin cutlet). The frying was classic in the best way, with perfect contact between the meat and the coating, and the cooking was spot on. It was my kind of satisfying thickness, and this may sound obvious, but the fat was delicious! It was a solid 200g portion, but it went down easily without getting old since it paired well with everything: wasabi salt, wasabi shoyu (soy sauce), and warm sauce.

I visited for lunch on a day off. The restaurant has plenty of seats, so it was nice that we could get in right away! The shredded cabbage served first was tasty with shiso (perilla) mixed in, and the tonjiru (pork miso soup) was also good. My friend and I shared the pork cutlets, Tenderloin and loin, and both were delicious. The spicy mustard mayonnaise recommended by the staff went really well with them! I’d like to visit again.

The tonkatsu at Tonkatsu Aoki (pronounced Aoki) is so good that it is delicious even with just salt, so the quality is beyond doubt! I recommend eating it with salt. The thickness, bite, flavor, and breading were all in great balance, and the high quality pork loin did not feel heavy even after the meal. I had not had tonkatsu this good in a long time!

I had the Shiho Pork (brand pork) hire-katsu (pork fillet cutlet) set meal. I seriously debated getting the loin, but I wanted something lighter, so I chose the less fatty hire-katsu. First, I tried it with rock salt, and it had a rich meaty taste with a crisp bite. It was delicious. Next, I tried it with the fruit sauce. I usually do not use much sauce and am not really a fan, but this sauce was incredible. It might have been the best I have ever had.
