The "Jo Hitsumabushi" features eel that is expertly grilled—crispy on the outside, tender and fluffy on the inside—with double the usual portion of eel.
It is served with a rich and perfectly balanced sweet-savory sauce that is truly impressive, and is also known for offering great value. The meal includes a side of kimosui (eel liver soup), which is another highlight.

Another available Nagoya specialty as popular as hitsumabushi is "miso kushi-katsu"—deep-fried pork skewers coated in a generous layer of rich, sweet red miso sauce. The bold flavors make it an excellent pairing with alcoholic beverages.

It had been a while since I last enjoyed hitsumabushi, and I was impressed by the perfectly crisp texture and delicious flavor. The portion was generous, but I finished it quickly by pouring hot dashi broth over the rice. You can also get free refills of both the dashi and condiments. The accompanying pickles were a nice touch.

Hitsumabushi is a must when visiting Nagoya—it's something I always look forward to. Enjoy it three ways: first on its own, then with condiments, and finally as ochazuke with tea poured over. The variety of ways to savor hitsumabushi is part of its appeal. The eel is crispy on the outside and tender inside, perfectly coated in sauce and served over rice for a harmonious combination. The rich flavor of the eel pairs beautifully with the clear, delicate kimosui (eel liver soup). Personally, I especially enjoy hitsumabushi with wasabi as a condiment.

Hitsumabushi (Regular)
This is the regular-sized hitsumabushi at Una Sho. It offers excellent value for money and is perfect for a casual meal. The sauce pairs wonderfully with the condiments, and it also tastes great as ochazuke (with tea poured over the rice and eel). Considering the price, it is highly satisfying.

★In Short★ Crispy, delicious eel with outstanding flavor. The sauce is exceptional, making this the best unagi in Nagoya. I tried the hitsumabushi, and the eel here is truly superb. Enjoy Hitsumabushi eel in Nagoya! At Una Zen, you can choose between the Kanto style and Nagoya style, which differ in both preparation methods and eel size. The main difference is whether the eel is steamed or not, so you can select based on your preference. This time, I ordered the Nagoya-style hitsumabushi, which emphasizes a crispy texture rather than a fluffy one. The serving was larger than expected, making for a satisfying meal.

I just had to come here for hitsumabushi! I was surprised that the Umaki (eel omelet) was served cold, but it arrived quickly and made the perfect appetizer. As for the hitsumabushi, it was absolutely flawless. The "Special Ohitsu Mabushi" features an entire eel served over a generous portion of rice, making it a truly satisfying meal.
The eel is expertly grilled to achieve a crispy exterior and tender interior. The dish is accompanied by a clear eel liver soup and three types of pickles, which pair perfectly with the ample rice.

From outside the restaurant, the enticing aroma of grilled eel fills the air. After being shown to your table and waiting a short while, a generous serving of hitsumabushi arrives. Every element is outstanding—the eel, the sauce, the dashi broth, and the clear soup with eel liver. The dashi was so delicious, I wanted a second helping. It was a truly satisfying meal.

Premium Hitsumabushi
Served in a beautifully lacquered vermilion container, this generous portion is visually stunning. Begin by adding condiments, then enjoy it as ochazuke with dashi broth, and finally finish with your own original style. What impressed me most at Unagi Kiya was the exceptional quality of the rice. The firm, slightly al dente grains—reflecting Nagoya’s local preference—pair perfectly with the savory sauce, enhancing the overall flavor.
