The "Namidai's whole eel" is a product born from the desire to offer a dish that has "no deception or compromise, a true masterpiece. We want you to enjoy the whole eel in its natural form." Furthermore, the special dish for the whole eel is a custom-made piece from a Shigaraki pottery kiln that has been in operation since the Edo period. It has excellent heat retention, allowing you to savor the deliciousness of the freshly grilled eel without losing its flavor. While being captivated by the smoke that rises every time the chef grills it with a fan, please look forward to the completion of this proud dish.
Food "Expert Selection from a Long-established Wholesaler: Grilling Seasonal Eel with Original Binchotan Charcoal!"
The eel wholesale business that is the foundation of Kikukawa selects eels from regions that are suitable for the season, assessing the fat content, and sends them live directly to the store. As soon as an order is received from a customer, the eels are prepared in the live kitchen and grilled over two types of binchotan charcoal from their own brand. Then, they are dipped in a secret sauce that has been repeatedly added to since the establishment of the business and grilled once more. The skin is crispy while the flesh is fluffy, and with one bite, the rich eel fat spreads throughout the mouth.
