When it came to the sushi rolls, I noticed that the woman standing on the opposite side of the counter was served a whole roll, but the chef kindly cut mine into pieces before serving. I believe this was because I prefer to wait until everything is ready, and the chef was considerate enough to prevent the nori from getting soggy. Such thoughtful service is always appreciated.

I was delighted to find my favorite, scallop adductor muscle, among the selection. This special encounter atop the wooden sushi geta was truly memorable. I also appreciated their kindness in accommodating my request to substitute the ikura (salmon roe), which I am not fond of. Their thoughtful service was both impressive and reassuring. Thanks to their consideration, I was able to enjoy the recommended nigiri comfortably, without ikura.

This is likely Minami Indo Maguro (Southern Bluefin Tuna), and the quality is outstanding. The thickness, cut, and aging are all perfectly executed. The balance of the nigiri is just right. The flavor is exceptional—even among high-end sushi restaurants, this stands out as an extraordinary piece. If they used wasabi that costs JPY 70,000 per root, this sushi would be worth charging JPY 5,000 per piece.
