花の生命は短いが、花山椒の時期もまた短い。
本当にえぐみが少なくて美味しいのは1週間だという。
花粉が飛び始めると、「幸村」の予約は花山椒目当ての人
ですぐいっぱいになる。昨年は出遅れて、5月しか予約が
出来なかったので、心していた。
4月の花山椒はえぐみが少ない。
生命が短いだけに新鮮さが重要で、摘み採られたらすぐ
出荷される。それはそれは脂の邪魔しない山形牛との相性
抜群で、1年越しの恋しさ。葉巻でウイスキーの変化を
楽しむように、花山椒の後に食すお酒もお料理も化学する。
今年は「幸村」がいっぱいで、別の階の心月で同じお料理
をいただいたが、やはり滋味である。この日はからすみ蕎麦
ではなかったが、翡翠豆ごはんの上品で優しい味わいに、
懐かしさを感じ、そろそろ里帰りしようと思いながら店を
後にした。
