快進撃を続ける一石三鳥グループ。
鮨業態は同じく新橋に会員制の「鮨 鴉巣」、
大阪の「鮨 豊」は結構先まで予約が埋まっているそう。
「鮨 鴉巣」さんには年明け伺って、
とても楽しませていただきました。
握る方はこちらも同じく、
ご実家が板橋のお寿司屋さんで、
かねさか系などにいらした本田さん。
魚の仲卸からお寿司の道に入り、
富山のミシュランの寿司屋にいらした樋渡さん。
今回は樋渡さんに握っていただきました。

シャリは、
笑みの絆とコシヒカリのブレンドで赤酢、
やや柔らかめ。
もう少し硬めだとほどけ具合が良くなりそうです。
サービスも感じが良いので、
