それは気付かずに通り過ぎるほど京都らしく、脚が留まり息を呑むほど惹かれる美しく見事な京都の佇まい。
古都 二寧坂。六百坪の大庭園に創建百三年の威厳。
現当主第十六代。三百八十七年の歴史を重ねる 正真正銘の銘店と。
門の奥は凛とした静寂の回廊。門脇に「 総本家 ゆどうふ 奥丹 」とありました。
予約をお願いするほどのご縁などある筈もなく、偶々通り縋った巡り合せのみ。
しかし、居た堪れぬほど惹かれ、御挨拶だけでもと門を潜ります。。
一歩踏み入れますと、深く奥へと続く回廊に、遥かな刻を越えた、鎧兜飾りが厳と座る。
呼び鈴で、藍の和装のはんなりとしたお仲居さんがお見えになりました。
恥ずかしながらのご相談を丁重に申し上げると、一旦奥へ下がられて、あらためて快くお席を賜れると。
そして下足箱を後にし、奥の客間へ。。
幾つかの細い廊下の角を曲がった先に、言葉にするのを憚れるほど あまりにも美しい新緑の大庭園に爽やかな青もみじが広がる。。
柔らかな風情のお客様が数組。それぞれの視界に配慮されたお席へ。細やかなお心遣い。ご予約の御座敷は二階にも。
美術館で一幅の名画に心を奪われて佇むように、座ることすら忘れ、庭園に感銘していると、お仲居さんは「本当にこの庭園綺麗ですよね。。私も大好きなんです。。」と静かに優しく声をかけて下さいました。
我に返って座布団にかけると、嫋やかに御品書とおとうふのご説明を頂きました。

おとうふは、国内各地から厳選した大豆を滋賀県で無農薬栽培。同県北比良の地下水と天然苦汁を自家製。
そのとうふ作りは、眼前に広がる大庭園の地下で毎日行われるという。
◎とうふみそ。
もろみ味噌の深みを湛え、とうふともろみ味噌の個性が互いに織りなす旨さ。
◎極上とうふみそ。
滑らかな舌触りと濃厚な発酵薫。半年以上もろみ味噌に漬け込まれ、いわばチーズの旨味と雲丹のコクを遥かに凌駕する逸品。
いずれもお酒にとてもよく合います。
◎冷奴。夏季限定
絹漉し。大豆本来の柔らかな甘さが優しい。このおとうふの繊細な美味しさを、生まれて初めておとうふを食べる味覚の鋭敏な子どもたちに食べさせてあげたい。おとうふがこんなにも美味しいものだときっと心に刻まれる。そんな美味しさと思います。

石臼引きの無農薬大豆の呉汁を木綿濾し。
昆布の一番出汁のみで湯どうふに。
おとうふの柔らかな薫りが際立ちます。
薬味もありますが、湯上げをそのままいただくのか一番美味しいと思います。
本当に心から美味しい 純粋なおとうふ。

白胡麻で作られたとは思えない胡麻豆腐。胡麻の芳醇な薫りと舌に湛えられる旨味。素晴らしく美味しかったです。

豆乳の生地に野菜たっぷりのおから餡。蒸かし立てをいただけるしっとりと優しいお饅頭です。
◎自家製豆乳 黒糖味
最後に豆乳。これが美味しい豆乳なのだと最初のひと口で分かります。グラスの底に黒糖があるので良くかき混ぜて召し上がって下さいとご案内ありますが、先ずは豆乳だけを是非。。そして黒糖で。。
