Osaka, Sakai, and Kusabe are believed to have their place names derived from the powerful clan of the Izumi region, the Kusakabe clan. The udon noodles that originated in this area are characterized by their chewy texture, made by carefully kneading selected ingredients. Skilled artisans make subtle adjustments to the salt concentration and water temperature every day, delivering the freshly made noodles to shops across the country.
Food "Carefully Crafted Broth that Maximizes Flavor"
We are committed to the umami derived solely from natural ingredients, so we want you to savor every drop of our broth! We extract the umami from carefully selected Rishiri kelp using a cold water extraction method over 14 hours. We blend several types of naturally dried bonito flakes that have been aged, and we take our time to simmer them carefully without adding any additives, in order to maximize the umami flavor.

Noraya started in August 1996, with a handmade shop in Kishiwada measuring just 12 tsubo. The name "Noraya" was inspired by the "stray cat" and "stray shed" that watched over the construction.We aim ...to provide our customers with a nostalgic atmosphere and freshly made udon,
which has allowed us to expand to locations in Osaka, Wakayama, Hyogo, Kyoto, and even Tokyo.
We strive to be a beloved spot for families across three generations.
